Good Afternoon Trevor,


To say the word "winter" sounds daunting. But in a nutshell, farming is really just preparation for the winter. So much effort goes into growing our fresh food plus the crops used to feed livestock all year round. At the farm, I've been feeling the pressure. Keeping our heads above water is a struggle at times. We've been busy making hay for the beef, putting up canned goods and frozen items for the winter CSA, and preparing our fields for next spring's crops.


This time of the year we start to see the flavors change some too. The shorter days and cool nights welcome fall flavors like winter squash and apples. Soon we'll see tomatoes and peppers disappear and be replaced by sweet potatoes and cauliflower.


With just 7 week's left in our summer season, we hope you have enjoyed the summer so far. I think of Fresh Fork as more than just food; to me, it's a community interested in preserving our food security; a community interested in learning and celebrating practical and sustainable farming practices that contribute to our health and the health of our environment; and it's a way of having fun while eating better. I'm thankful every day for the chance to do the work I do, and thank you for supporting Fresh Fork and our network of farmers.

Apples in the Kitchen

The farm kitchen smells amazing right now. The kitchen crew has been busy working with apples this week, including:


Apple Pie with Crumb Topping: Also known as Dutch Apple Pie. The trick to this pie is to make the filling a few days ahead. Soak the apples with cinnamon and sugar to pull out a bit of the water. The resulting juices are cooked down and added back to the apples, dusted in flour, to provide for apples with texture in a juicy, flavor rich filling. Topped with a crumb topping of flour, oats, brown sugar and butter.


Serve warm and with ice cream for maximum smiles!


Apple Cinnamon Loaf. We are replacing the zucchini bread this week with a new quick bread. Apples are folded into a sweet batter for a moist breakfast or dessert bread. Only $5 per loaf.

Extra Fruit

Fruit is quickly disappearing with the cool nights. This is the last week we'll have many of the tree fruits other than apples and pears.


Blackberries are too unreliable right now to list online. If we get any in, they will be at the back of the truck

We worked with the orchard to drop the price. We took a "field run" - which means we get the #2s in a 1,000# bin. We'll grade out the pears and process the #2s in the kitchen for higher value preserves so we can offer fresh pears at a better price.


Honeycrisp - 6 ct $6. The gold standard of eating apples, intensely sweet and crunchy.


Paula Red - 6 ct, approx 2.5# - $3.50

Early, sweet apple that cooks down great for sauce and pies, but also a decent eater. A dusty, dull skin gives it a distinctive look.

Fan favorite, great crunch, sweet flavor, and all around great apple.

Winter Season Registration

Fresh Fork in the winter isn't all kale and turnips; it's a chance for us to show off how we have been planning ahead all year.


Our winter program is a bigger bag, and after Thanksgiving it is every-other-weekThe season starts out with cold hardy crops, transitions to more meat and storage crops, and ends with more prepared items. We have fun over the winter with projects like our farm-made quiches, pepperoni rolls, ratatouille, soups and more.


Here are the winter highlights:

  • Omnivore and Vegetarian Options available (vegetarian very limited)
  • One Size Package - more similar to the summer large
  • Schedule - Starts Nov 1, first 3 weeks in a row, then every other week until mid May
  • Same vacation policy and guarantee. 4 weeks can be put on hold and cancel at anytime.
  • Flexible re-occurring billing available with credit card on file
  • 13 area pickup locations, Wednesday thru Saturday
