TIPS, TRICKS AND NONSENSE !

Fondant is back in a big way but, it does have its characteristics.

You just happen to have a friend that knows all about fondant.

Here is my nonsense about fondant.

1. First knead the fondant to make it soft and easy to handle . Knead in Crisco and roll in powdered sugar.






2. Roll the fondant thick so it can stretch down over the cake. If you do not roll thick the fondant drys out to quickly causing wrinkles, tares, and elephant skin. Roll the correct amount of fondant only to the size you need it to cover the cake.

Formula add inches of the 2 side to the length of the top of the cake this is how big your fondant should be .






3. Roll quickly. Moving the fondant every pass . Roll round for round cake and square for square cake. Fondant the shape of Texas does not cover a round cake.






4. Smooth the top first so not to trap air this way you will not get air pockets. Then cover corners and sides focusing on only spot at a time.






5. Only color your fondant with a gel color or a powdered food color. Watery color can cause wet and sticky fondant, this will be a mess. For those dark rich colors pay the money for precolored fondant you will be happy you did.




6. Always make sure you crumb coat your cake so the fondant is sure to stick to the cake nothing worse then your fondant not sticking the the sides.




7.Refrigerate your cake after for 24 hours this will assure that everything is stuck good and adds integrity to the cake for easy delivery. Make sure your refrigerator is not opened a lot to ensure lo humidity.
