Fresh, juicy watermelon is delicious on its own, but when you top it with a creamy almond-scented spread and pile on berries, chocolate chips, and toasted almonds, it becomes an elegant dessert. The modest amount of chocolate chips and almonds makes a surprisingly big impact, making the dish feel rich and indulgent. You can assemble the pizza an hour or two ahead and stash it in the fridge until you’re ready to serve it; that way, every element will be refreshingly cold.

  • ½ cup plain fat free Greek yogurt
  • 2 oz reduced fat cream cheese (neufchâtel), softened
  • 1½ tbsp powdered sugar (confectioner's)
  • ¼ tsp almond extract
  • 1 slice watermelon, a full circle, 1-in-thick
  • ½ cup raspberries
  • ½ cup blueberries
  • 1½ tbsp sliced almonds, toasted
  • 1 tbsp mini semisweet chocolate chips

1.   In a medium bowl, stir together the yogurt and Neufchatel until smooth. Stir in the sugar and almond extract.

2.   Pat the surface of the watermelon slice dry with paper towels and spread the yogurt mixture over the top. Top evenly with the berries. Sprinkle with the almonds and chocolate chips. Cut into 6 wedges.

3.   Serving Size: 1 wedge Watermelon Pizza.
