Good morning

We thought we'd tell you a little about our tremendous T-Bone Steaks this week. Regularly flown in fresh from Australia, they're free range, and guaranteed to be hormone, steroid and antibiotic free. We can cut them to the thickness you desire, and can also vacuum pack them on request, which offers a longer shelf life (up to ten days shelf life when chilled in your refrigerator). And since they're fresh and not previously frozen, they're ideal for freezing if you want to keep some for unexpected guests.

T-Bones make a great choice for cooking either outdoors on the BBQ, or indoors under the grill, and are also delicious pan-fried, making them a very versatile cut.

Seafood in Focus

Fremantle Octopus~$310 Buy online>>

Octopus is not a seafood that many people would think to use when cooking seafood. However, it's very versatile and can be applied to many recipes. Our Spanish Chef, Jose, has a simple recipe this week using this delightful and succulent ingredient.

Our octopus is imported directly from Fremantle, Western Australia. West Australian octopus is considered to be the best eating octopus in the world, as its environment has an abundance of its favourite food - lobsters, crabs and scallops.

The rich, dense  flesh has almost a lobster-like sweetness to it and the smooth creamy texture is a result of the handling at harvest and the use of the slow freezing method. The octopus suits a range of cooking methods, from braising and slow roasting to chargrilling on the barbeque. For the more adventurous, our octopus can be de-frosted and eaten as carpaccio or sashimi.

The octopus is raw,  prepacked in 1kg packs and is available at all Pacific Gourmet shops and online.
