The WFM is a producers-only, non-profit organization. It was established to provide a venue to sell farm-fresh, seasonal produce, and specialty items to the Waxhaw area. Shopping at our market is a great way to support local agriculture, promote sustainable farming practices, and enjoy fresh and delicious food.

Tomato Recipes:

Classic Caprese Salad

Ingredients:

  • 4 large tomatoes, sliced
  • 1 lb fresh mozzarella, sliced
  • Fresh basil leaves
  • Extra virgin olive oil
  • Balsamic glaze
  • Salt and pepper

Instructions:

  1. Arrange tomato and mozzarella slices on a platter, alternating each slice.
  2. Tuck fresh basil leaves between the slices.
  3. Drizzle with olive oil and balsamic glaze.
  4. Season with salt and pepper to taste.

Tomato Basil Pasta

Ingredients:

  • 1 lb spaghetti or your favorite pasta
  • 4 large tomatoes, diced
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil, chopped
  • Salt and pepper
  • Parmesan cheese, grated (optional)

Instructions:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add diced tomatoes and cook for 5-7 minutes, until tomatoes begin to break down.
  4. Toss in the cooked pasta and fresh basil, mixing well to combine;

Stuffed Tomatoes

Ingredients:

  • 6 large tomatoes
  • 1 cup cooked quinoa or rice
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • Salt and pepper
  • Olive oil

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Slice the tops off the tomatoes and scoop out the insides, leaving a hollow shell.
  3. In a bowl, mix cooked quinoa or rice, feta cheese, parsley, green onions, and garlic.
  4. Season with salt and pepper, and drizzle with a little olive oil.
  5. Stuff each tomato with the mixture and place them in a baking dish.
  6. Drizzle the stuffed tomatoes with a bit more olive oil.
  7. Bake for 20-25 minutes, until the tomatoes are tender and the filling is heated through.
