What's happening in the Vineyards


As the Vineyard turns….”


In the Northern Hemisphere, the months of July and August are when grapes on a grapevine begin to ripen, a process called veraison. During this stage, the grapes change from small, hard, green berries into the grapes we recognize, becoming softer, larger, and more mature in color. The grapes also develop higher sugar levels and less acidity. 

Here are some other things that happen to grapes during the months of July and August: 

  • Fruit set: Clusters of grapes form in July. 
  • Color change: The grapes' chlorophyll is replaced by anthocyanins (red wine grapes) and carotenoids (white wine grapes), causing them to turn translucent gold for white varieties and purple-ruby tones for red varieties. 
  • Engustment: The berries soften as they build up sugars. 
  • Shoot tipping: Winegrowers may perform shoot tipping to control yields and select the best grapes. 
  • Hedging: Vines may be hedged to allow more light to reach the canopy, which is important for fruit maturity. 

The ripening process is influenced by weather conditions, and is accelerated by warm temperatures. However, ripening can be suspended during periods of high wind or very high temperatures because photosynthesis would result in excessive water loss.
