May is American Cheese Month, started by The American Cheese Education Foundation (ACEF) to recognize the special cheeses produced in the United States. Take this month to celebrate the American cheese industry by supporting your favorite American-made cheeses, local cheese shops, and family farms. Ask your local cheesemonger to help you discover cheeses that are produced through sustainable practices, good animal husbandry, and that honor traditional production methods. Share what you're having for American Cheese Month on social media!
Prufrock

Made with pasteurized cow’s milk, and aged four weeks, this cheese exudes hints of apricot, nuttiness and carrot along with yeasty notes of freshly baked bread. Prufrock's edible rind adds to its complex flavor profile and has a subtle orange color with touches of pink and white. When it rests at room temperature for at least 30 minutes, its interior paste is thick and gooey. This cheese is absolutely luscious on toasted bread topped with chunky apricot jam or spicy mango chutney, on a classic cheeseburger with all the fixings, or as the star of an impressive grilled cheese sandwich.
Chocolate Lab

Chocolate Lab is made with pasteurized cow's milk, washed in Highland Brewing Stout, and coated in cocoa nibs from French Broad Chocolate—giving this cheese a pungent and robust flavor. It has such a distinct and unusual flavor that it has earned many loyal fans. This one goes well on a cheese board or at the end of a meal. Show-stopping cheeses like this don’t need a lot of extras though, so keep it simple with whole wheat crackers and a port wine or stout beer. 
Selection of Fresh Goat Cheeses

Chevre, fresh goat milk cheese, usually comes as a small cylinder. However, the chevre produced at Pure Luck Farm and Dairy in Texas is no ordinary cheese—in both shape and taste. ​Basket molded so it is shaped like a large disk and brimming with aromatic flavors, these delicious pasteurized goat milk cheeses are wonderful combined with many foods. Use the herbed versions with bagels, grilled vegetables, or in stuffed pasta. They are always great on a cheese board drizzled with honey, and the plain version with its smooth milky notes gives cream and butter a run for their money!
Pairing: Rosé
Rosé wines are perfect for unpredictable spring weather. Chill them on warm days or enjoy them at room temperature when there's a bite in the air. The sweet fruit notes of many Rosés complement both aged and fresh cheeses. Different methods can be used to make Rosé, all of them resulting in delicious wine that, in the US, is produced across the country from California to Colorado and Texas to New York and New England.
