A Spotlight on Mediterranean Cheese

Umbriaco Al Prosecco 

Presented by Fortune Fish & Gourmet

The story behind this cheese is that during WWI the farmers of the Veneto region tried to protect their cheeses from the enemy by hiding in the wine must. They then discovered the wonderful flavors it imparted on the cheese and how well it kept. As such, the rind of Umbriaco Al Prosecco has hints of burgundy red with a grape leaf, and the paste is ivory to a light straw color. It has a creamy, milky and winy flavor—particularly the closer it gets to the rind. Ubriaco has a long after taste with strong notes of wine and raisin.

Valserena

Presented by Zingerman's Delicatessen 

Made by the oldest dairy in Parma, Valserena is one of the last farmstead Parmigiano Reggiano's being made, meaning they grow the feed, raise the animals, and make the cheese all at their farm.The Serra family's herd is solely comprised of rare, brown Sola Bruno cows that deliver unparalleled rich and fatty milk, which is why these wheels are so different. They age their cheese long and slow, delivering a huge, brothy, and nutty flavor. This is a raw milk cheese.
