Directions
Preheat oven to 350 deg.
Batter Mixing
In a small mixer bowl, combine flour, sugar baking powder and salt. Add the milk, shortening, egg and vanilla. Beat with electric mixer on low until combined. Beat on medium for 1 minute. Pour batter into a greased 9x9x2 baking pan/dish and spread evenly.
Middle Layer
Sprinkle Blueberries over batter mix
Topping Mixing
In a medium bowl. lightly beat 2 eggs with fork. Add ricotta cheese, sugar and vanilla. Mix until combined. Spoon topping mixture over top of blueberries until evenly spread.
Baking Directions
Bake in 350 oven for 55-60 minutes.
Let cool, top with with cream (optional) and enjoy! Cover and store in refrigerator.

Optional - add about 1-2 tsp of fresh lemon zest to the blueberries. And you can use mixed berries too for this recipe.
