Spring Ahead with Less
While I walked the Market this past Saturday, I was touched by all the kind and affirming conversations that our guests were having about this and that. Just to walk by and hear how excited they are to see plants back in the Market and how they can’t wait to purchase more flowers and fresh produce made me look forward to these warmer days ahead.
It was with my friend, Laura Leathers, who I got to enjoy some of the sweetest talks about the joys of the Market. And how it’s the simplicity of spring that seems to resonate with all of us—nature is budding, blooming, and blossoming all the beauty and bounty we need!
I also noticed that, at the Market and in my local church on Sunday, attendance isn’t what it normally is and here’s why:
Families are together during Spring Break week.
Usually on Friday before spring break week, as soon as kiddos are out of school on Friday, many families head off to the beach, to visit grandparents, or simply to stop their normal routines for a much-needed vacation at home. But either way, what I love so much about spring break week for young families is not only are they more intentional in being away together somewhere, but it’s a week that…allows them to "spring ahead" into a new season of life with less. It’s one solid week where they typically have less on their calendars—less on their to-do lists, less to interrupt their attention, less to keep them stressed, and more time together.
When we move ahead into this new season of spring, we want to help you, at the Mississippi Farmers Market, have even less to worry about when it comes to your family’s health. That’s why it’s a joy for our farmers and processors to provide fresh fruits and vegetables, meats and dairy, plants, herbs and wholesome baked goods, week after week. We are truly blessed with some of the most excellent farmers who place integrity in their farming.
So as you move into this budding new season called "spring," let’s all think about how we can spring ahead with less—less to rob us of our greatest asset:
time. Less to fill our life with distractions. So that we can move forward with much more to invest into what really matters in each of our lives
—our loved ones.
Here is a recipe for you:
Salmon and Kale Caesar Wraps
Serves 4
INGREDIENTS
5 cups shredded kale (from about 1 small bunch)
1/2 cup shredded Parmesan cheese
1/2 cup caesar salad dressing
6-ounce wild caught salmon - grilled or baked in oven or skillet baked
4 large flour tortillas
INSTRUCTIONS
- Place the kale, Parmesan, and Caesar dressing in a large bowl and toss until the leaves are evenly coated with the dressing.
- Add the salmon, use a fork to break it into flakes, and toss to combine.
- Place 1 tortilla on a clean work surface.
- Spread a quarter of the filling horizontally, slightly below the center of the tortilla.
- Roll the wrap tightly by folding the sides over the filling, then rolling from the bottom up. Repeat with the remaining 3 tortillas.
- Serve immediately.
Storage: Store any leftover filling in a covered container in the refrigerator for up to 3 days.
