FALL is a time for beautiful colors and warm, comforting foods. Sometimes when we think "comfort foods", we think heavy, fatty, not so... um, healthy?!?!? Well, that does NOT need to be the case. I love colors in my foods; I think sun, wind, earthy elements entering my body with each and every bite. This gluten-free, dairy-free butternut squash soup is sure to make you feel comforted & warm inside, plus full of energy because of all the vitamins and nutrients in just one serving.
Just like barre, I like to make short and precise recipes that are sure to pack a punch! I LIKE EFFICIENCY!
Saute onion, celery, garlic, and carrots for about 5 minutes. You can always add a little lemon or lemon rind (every time I cook, I change things up a little... depending on what I have on hand. This can be quite annoying to some people that like to follow a recipe... but you never learn or grow by doing the same thing. Again, just like barre, you need to challenge yourself to see a difference!)
add in peeled and chopped apple (sweet or tart...your choice!)
butternut squash (I go the easy route and bye already cut up butternut squash soup!)
add broth (chicken or veggie... just make it low sodium. I like to add my own salt at the end)
bring to a boil and simmer for around 10 minutes.
Place in a vita/blender and blend away to a nice smooth consistency. Feel free to add some almond/coconut milk at this point to add some creaminess... even an avocado! Again, sorry, I change things up and this time I added non of the above!
Season with sea salt, pepper, cinnamon and nutmeg! Oh... and I added some 100% fresh maple syrup for good measure. :)
Eat it now or enjoy later! By the way, this soup tastes delicious with a glass of red vino ;) As in barre, listen to your body and what you need at that moment... it is smarter than you!
