RECIPE


Banana Coffee Cake

 

This is one of my favorite coffee cakes. It is moist and delicious and actually retains its great flavor and texture over 1-2 days making it a great make ahead breakfast treat.

 

  • 1 1/3 cup + ¼ cup of freshly milled soft wheat flour
  • ½ tsp. salt
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. nutmeg
  • 1 cup ripe mashed banana (about 2 large bananas)
  • 1/3 cup mild honey
  • 3 Tbs. oil
  • 1 tsp. vanilla
  • 1 large egg

 

  • Topping:

 

  • ½ cup sucanat
  • 2 Tbs. water
  • 1 ½ tbs. butter
  • 4 Tbs. walnuts
  • 4 Tbs. dried unsweetened coconut

 

Preheat oven to 350 degrees.


Grease a 9” round cake pan. Line bottom of pan with wax paper.


Combine dry ingredients. Combine bananas, honey, oil, vanilla and egg. Beat until well blended. Add flour mixture and beat until blended. Pour batter into prepared pan. Bake at 350 degrees for 30 minutes or until pick inserted in center comes out clean. Cool in pan for 10 minutes, remove from pan and carefully remove wax paper.



**Double recipe and topping for a 9”x13” pan or Braided Ring pan.


Prepare topping:


Combine sucanat, water and butter in a small saucepan and bring to a boil. Cook 1 minute, stirring constantly. Remove from heat; stir in nuts and coconuts. Spread topping over baked cake.

She will be touching on these items in the class but will not be going over them in this much detail. This video is to help you better understand the ingredients being used in this class.

We will demonstrate milling flour, mixing quick breads, kneading bread dough, and more.





BEYOND BREAD WITH OLIVELLE

Friday August 23, 2024

THIS CLASS IS FULL


If you haven’t tried our Olivelle infused oils and balsamic vinegars this is your perfect chance. With a few weeks of great grilling weather left for the summer and just in time for a Labor Day weekend gathering, what could be better than a superbly flavored burger on top of a homemade bun. Whether you grill then or not, they will be delicious.


In this class, we will feature Green Chili Burgers with Red Pepper Jam and Caramelized Onions served with Chili Lime Sweet Potato Fries and a delicious Everyday Salad with Lemon Poppyseed Dressing. We will finish off this fun meal, with my favorite Chocolate Cake with Chocolate Ganache and Raspberry Ice Cream topped with Chocolate Espresso Balsamic.


We will start the class with a fun appetizer and a taste of a Frozen Peach Oolong Tea. Come enjoy this very flavor-full class.

You spoke and we listened. For those overwhelmed by the longer Getting Started class, this will be a scaled down version, covering just the “essentials” of home flour milling. Sue will show you how fast and easy it is to make wholesome and delicious bread, cinnamon rolls, muffins and cookies. And of course you will be sampling what is made during the demonstration.


CO-OPS

Co-ops are a great way to get your grains and other supplies that are just too expensive to ship any other way. Current co-op shipping rates range from 15 cents to 18 cents per pound (depending on distance from our warehouse) when we deliver on our own truck, compared to UPS rates that can be around 75 cents a pound and more!


We have over 100 co-op locations around the Southeast. Visit our website and find the co-op closest to you, our coordinators will be happy to welcome you into a co-op!
