The last big weekend of summer is almost here! Louie's is open daily to serve you as you travel through Northwest Wisconsin. Give us a call at 715-822-4728 and we'll have your order ready when you get here. After-hours pickup of meat orders is available at Louie's Lodge if you're running late.

On Tuesday, August 8 we attended the Governor's Blue Ribbon Meat Products Auction at the Wisconsin State Fair​, benefiting the Wisconsin 4-H Foundation​.

91st Annual Cumberland Rutabaga Festival

August 24-27, 2023

Recipe: Rutabaga Shepherd's Pie

Featuring Cumberland's favorite root vegetable!


Ingredients

1 tbsp Olive Oil

1 medium Onion, diced

2 cloves Garlic, minced

1lb. Louie's Ground Chuck

1 stalk Celery, diced

1 medium Carrot, diced

1/2 cup Red Wine from Louie's Lodge

1 cup Beef Broth

2 tbsp Tomato Paste

1 tbsp Worcestershire Sauce

1 tsp chopped fresh Thyme

1 cup frozen Peas


For the Rutabaga mash

3 lbs Rutabaga, peeled and chopped into 1 inch pieces

1/2 cup whole Milk

1/4 cup unsalted Butter

1.5 tsp Kosher Salt


Directions

  • Place rutabaga in a large pot, cover with water, and bring to a boil. Boil until the rutabaga is soft and tender, about 25-30 minutes.
  • Meanwhile, heat the olive oil in a 10-inch oven-safe skillet over medium heat. Add the onion, season with salt and pepper and cook until softened and translucent, then add the garlic and cook for two more minutes. Crumble the ground beef into the skillet and cook until browned, about five minutes. Stir in the carrot and celery and cook a few more minutes. Add the red wine to the skillet and cook for three minutes, then add the tomato paste, Worcestershire, chopped thyme, broth, and half a teaspoon of salt. Bring to a boil, then reduce the heat to medium-low and simmer until saucy, about 10 minutes. Stir in the peas during the last two minutes of cooking. Remove the skillet from the heat.
  • Preheat the oven to 350 F. Drain the rutabaga, return to the pot and mash with a potato masher. Add the rutabaga and remaining salt to a food processor, adding butter one tablespoon at a time. Add milk gradually until a smooth puree forms. Spread the rutabaga mash evenly over the mixture in the skillet, then bake for 40 minutes until the filling is bubbling and the crust is golden around the edges. Broil for five minutes until the top browns. Cool and serve!
