The writer interviewed Cole Mannix from Old Salt Co-op about the issues facing Montana ranchers and what he is trying to do to fix the problems. Old Salt Co-op member ranchers raise, slaughter, process, and sell their meat locally, controlling ever aspect of their business and profiting along the way. This isn't easy and takes a lot of time, money, and tenacity, but Mannix and his team are making it work.

This classroom workshop covers the basics of safely processing chickens on-farm in open air or alternative structures, on-farm.
