DeLille Cellars

Founded in 1992, DeLille was one of the first wineries in Washington State to focus distinctly on both red and white Bordeaux-style blends. Seeking to create the best blends through combinations of different grapes varietals and vineyard sites, the founders of DeLille Cellars believed that all good blends transcend the sum of their individual parts. This founding principle and a company philosophy of “always seeking” guides the winery’s commitment to constant improvement, continuous discovery in the cellar, and exceptional wines and experiences.

In 2022 DeLille Cellars celebrated 30 years of winemaking!

Click on the video below to hear the Founding Story directly from the founders: Chris Upchurch, Jay Soloff, Greg Lill, and Charles Lill. I think you will enjoy their first-person perspective along with the photos of how everything came together.

Join us this week as we feature FOUR of DeLille Cellars' offerings that showcase some of the best fruit from Washington State.

"Métier" Columbia Valley Sauvignon Blanc 2022

Columbia Valley, WA

$27 btl/retail

SUMMARY: The sun-soaked Columbia Valley of Washington State provides ideal growing conditions for Sauvignon Blanc, with dramatic swings in temperature from day to night. This 2022 SB is bright & silky on the palate while balancing generous fruit flavors on a lively structure and a lengthy finish.

VARIETAL/WINEMAKING: 100% Sauvignon Blanc sourced from primarily Horse Heaven Hills vineyard. Aged in 8% new oak.

TASTING NOTES: Shows pretty white rose petals and pink grapefruit blossom notes that combine with kiwi on the nose. The palate is soft and nicely textured with bright acidity that holds together a core of green apple and kumquat with green papaya notes.

PAIRING: Would go well with favorite grilled chicken recipe, arugula-based sides, and pasta salads. For a fun twist on things, try it with your preferred curry & rice recipe.

DeLille Cellars

"Métier" Columbia Valley Cabernet Sauvignon 2021

Columbia Valley, WA

$36 btl/retail

SUMMARY: Métier Cabernet Sauvignon is an inviting, smooth wine with black cherry and plum aromas pouring from the glass. Flavors of bold dark fruits and charming notes of baking spice combine with a juicy midpalate and pleasantly firm, dry finish. Best paired in the company of family and friends, Métier offers a balance of structure and approachability that brings undeniable appeal.

VARIETAL/WINEMAKING: 100% Cabernet Sauvignon. The grapes are sourced from various vineyards in the Columbia Valley, which provides ideal growing conditions for Cabernet Sauvignon, with dramatic swings in temperature from day to night. The wine is fermented and aged in stainless steel tanks to preserve its freshness & vibrancy.

TASTING NOTES: While in the glass, it has a bright ruby color and a peppery floral aroma of red currant, raspberry and thyme. The flavor is tart and juicy, with notes of cherry, cranberry, sage and mineral. The acidity is lively and balanced, giving the wine a crisp and satisfying finish. The tannins are grippy and well-integrated, adding structure and depth to the wine.

PAIRING: Fire-up the grill- Métier Cab excels with your classic burgers, bratwurst, portabella caps!

DeLille Cellars

"D2" Columbia Valley Red Blend 2020

Columbia Valley, WA

$64 btl/retail

SUMMARY: D2 takes its name from the grand route du vin, or great wine road that travels through the historic chateau region of Bordeaux. Always leading with Merlot, D2 is a traditional Bordeaux-style blend sourced from over a dozen of the state’s most prestigious vineyards across the Columbia Valley to create the ultimate expression of Washington State terroir. Created as a second to Chaleur Estate, D2 has become the winery’s most sought-after label.

VARIETAL/WINEMAKING: 60% Merlot, 34% Cabernet Sauvignon, 4% Cabernet Franc, 2% Petit Verdot. Cold soaked 24-36 hours, fermented 12-14 days on skin, aged 18 months in 100% French oak (55% new).

TASTING NOTE: On the nose, hints of dried cranberry, black cherry, vanilla, and lavender flow into a palate filled with flavors reminiscent of chocolate and fresh ground nutmeg. Many of the state’s most heralded sites provide pure fruit and savory characteristics here, with toasty oak influence deftly supporting in the background.

PAIRING: The prominent Merlot composition really makes the 2020 D2 shine when paired with smoked meats... in particular ribs and pulled pork.

DeLille Cellars

"Four Flags" Red Mountain Cabernet Sauvignon 2020

Red Mountain AVA, WA

$92 btl/retail

SUMMARY: The chaos of the 2020 vintage provided an opportunity to return to a former Carignan source in the Redwood Valley. The historic Casa Verde Vineyard was planted in the 1940's on a wind-swept pitch north of Lake Mendocino. It is one of the Redwood Valley's neatest heritage plantings with white and red grapes co-mingling in an old-school California sprawl. Explosively aromatic, but with an attack that is more restrained it leaves every jammy Zinfandel in the dust.

VARIETAL/WINEMAKING:   100% Cabernet Sauvignon from the Red Mountain AVA. Cold soaked 24-36 hours, fermented 14-16 days on skin, aged 20 months in 100% French oak (100% new) and aged in bottle 8 months prior to release.

TASTING NOTE: This Cabernet sports a ruby/plum color to go with terrific notes of red and black currants, spicy oak, dried flowers, and hints of tobacco. The wine slowly unwinds secondary aromas of black cherry, cassis, sandalwood and olive tapenade. The palate offers hints of fresh ground coffee, cacao nibs, and red currant, which are all supported by silky, yet generous tannins. Long finish that encourages another sip...

PAIRING: Red Mountain fruit does very well with your favorite beef selections for the grill... Also, food-friendly enough to highlight your summer veggie bounty in a Ratatouille preparation.
