Fall is in the air down here at the farm. It was flannel weather this morning and it is refreshing compared to the cookers we’ve had this summer.
 
In celebration of our WINTER SEASON REGISTRATION BEING OPEN TO THE PUBLIC, we have some fun promotions this week for everyone

Here are some of the highlights of this week:

-         Snooze You Lose Chicken Discounts. Winter season is heavily limited by the available products in Ohio’s winter. As a result, we do sell out each year. This week, in honor of those signing up now, get 10% off all pasture raised chicken – whole birds, breast, drumsticks, wings, and bones. 
-         Bringing back the Chiffon RollThis week our kitchen was looking for a change up for pies, so we are featuring a Grape Vanilla Bean Chiffon Roll.  This spongy, soft cake is wrapped around a sweet and tart grape filling, infused with a hint of vanilla bean. 
-        Open to the Public Bundle WeekWe put together several money saving freezer bundles this week, including some new ones like our red wine marinated beef chuck roast bundle and righteous breakfast bundle

Join us For Winter
Fresh Fork in the winter isn't all kale and turnips; it's a chance for us to show off how we have been planning ahead all year.

Our winter program is a bigger bag, and after Thanksgiving it is every-other-week. The season starts out with cold hardy crops, transitions to more meat and storage crops, and ends with more prepared items. We have fun over the winter with projects like our farm-made quiches, pepperoni rolls, ratatouille, soups and more.

Here are the winter highlights:
  • Omnivore and Vegetarian Options available (vegetarian very limited)
  • One Size Package - more similar to the summer large
  • Schedule - Starts Nov 2, first 3 weeks in a row, then every other week until mid May
  • Same vacation policy and guarantee. 4 weeks can be put on hold and cancel at anytime.
  • Flexible re-occurring billing available with credit card on file
  • 13 area pickup locations, Wednesday thru Saturday

Pizza Week
It's that time of the year for the family to pitch in and make homemade pizza. This is personally one of my favorite meals at home, and we're opening up the online shop to everyone this week!

I'm too spoiled by Allyson's pizza skills to ever eat pizza out. Pizza at home is loaded with veggies, unique flavors, and isn't greasy at all. I think it is one of the healthiest meals we make as it's an easy way to use up all the bits of veggies in the fridge.

This week's bag does require some work on your part. We have a Pizza Guide put together HERE.

The most important things to remember:
1) Let your dough thaw and rise at room temperature before using.
2) Preheat your oven (including pizza stone, tiles, or even cast iron pan) to 450 or hotter before beginning.
3) Parbake the crust without toppings then add the toppings. This keeps the crust crunchy.

For the sauce, we have provided roma tomatoes. Making homemade sauce is simple.
1) Blanche and peel the tomatoes.
2) Stew the tomatoes down, adding herbs and spices as desired
3) Blend in vitamix, immersion blender, or through a food mill (food mill preferred to remove the skins).

Grape Vanilla Bean Chiffon Roll
This week's featured baked good is a delicious chiffon roll. Mary Ann and Carol in our kitchen had this idea a few months ago when separating eggs for mayo. We needed the yolks then for mayo for BLT week, and we couldn't stand to see the eggwhites wasted.

They start by whipping the egg whites to a firm peak - the leavening agent for a soft, spongy chiffon cake. The batter is made and spread onto sheet trays where it is baked to a golden finish.

In the kettle, they stewed the concord grapes before passing thru the food mill to remove the seeds and skins. The grape filling is seasoned with vanilla bean and cooked into a thick jelly like texture. It's spread on the chiffon cake and rolled, before being dusted with powdered sugar.

Enjoy chilled for breakfast or in the evening with a glass of white wine or hard cider.

We didn't want to hold back on this bundle so the kitchen whipped up a new bread, yeasted apple bread (as opposed to a quick bread) using local apples and organic local pastry flour. This bread is excellent on its own, or I challenge you to use it for a French Toast.

Strawberry stuff. I don't want to call it a a jam or a sauce because that limits the uses. It's a loose set strawberry jam/sauce using local organic strawberries, organic sugar, and a touch of pectin. It is lightly sweetened, allowing the acid and flavor of the strawberries to shine.

Enjoy it on your toast or biscuit, over pancakes, on ice cream, or as a base for an agro-dolce on pork chops. This "stuff" has endless uses compared to a traditional jam.
MARINATED BEEF ROAST BUNDLE

We start with a grassfed beef chuck roast and vacuum seal it in a traditional red wine marinade (red wine, cider vin, rosemary, thyme, s&p, and mirepoix).

Served with classic pot roast veggies and fall flavors.

Simply open the bag, dry off the roast and give it a sear. Strain out the marinade and reduce by half in a skillet. Add to the beef roast, cover with stock (provided), and add back veggies. Braise until fork tender.
