With the arrival of 2011 came some big news for me - my very own radio segment entitled Rider On Recipes, airing Sunday's at 2:30 on the Craig Bushon Show Talk Radio 1370 AM.

Rider On Recipes features easy to prepare recipes, time saving tips, cost cutters and new gadgets that make pulling a meal together easier!

What's your favorite restaurant entree?   Email it to me and I will break it down for you so that you can prepare it at home and offer modifications as well.

I just cannot contain my excitement!  

 

Approached by a Producer several weeks ago, Rider On Recipes is slated to film a PILOT on February 26th, which will be marketed to Broadcast and Cable Networks throughout the US.

Saying Happy Valentine's Day with food.

My friend since Middle School, Chef Gary Miller and I talk food all the time. He is an amazing and creative Chef in New Zealand and is the Vice President of the New Zealand Chef Association.  He sent me this incredible recipe and I had to share it with you as it's perfect for Valentine's Day!

Chef Miller's Chocolate Mousse

Ingredients:
  • 14 oz. good quality Semi Sweet Chocolate
  • 7 oz. whipping cream
  • 1 C white sugar
  • 6 whole eggs
  • 6 egg yolks
Directions:   Place chocolate in a bowl and melt over a pan of boiling water  Once chocolate is melted and smooth you can add your favorite flavors - such as Drambuie, Bailey's, or bourbon. A favorite of mine is a tablespoon of clear honey mixed with 1 teaspoon of strong ground coffee granules and a slug of whiskey.   Whisk cream until it forms stiff peaks - place in the fridge until needed.   Whisk sugar and eggs in a kitchen mixer until it swells in volume and it light and fluffy.   In a large mixing bowl FOLD all of the three ingredients - egg sabayon, whipped cream and melted chocolate. Use a pliable plastic spatula, make sure you mix all the ingredients thoroughly together.   Once mixed, pour into a suitable sized container and refrigerate (for at least 24hrs)

Serve anyway you want too, see attached pic for how I do mine - in a brandy snap basket with pitted sweet morello cherries and a scoop of vanilla creme fraiche.

This is a very lush recipe and per portion you only need about 1 1/2  tablespoons per person.

 

Chocolate Mousse

Homemade Hummus - easy, healthy, delicious!
Homemade Hummus is incredibly easy to make.  It's a healthy choice over regular dips and tastes incredible.   I always keep a few cans of Chickpeas in my pantry and a jar of Tahini in the refrigerator.

 
Ingredients:
  • 1 16 oz. can chickpeas, drained but liquid reserved
  • 1/4 C chickpea liquid
  • 3 clove garlic
  • 5 T fresh lemon juice
  • 2 T Tahini
  • 1 t sea salt
  • 2 T olive oil
  • Paprika
Directions:   In a blender or food processor, mix chickpeas with 1/4 C of their liquid then add the garlic, lemon juice, tahini and sea salt.   Blend until smooth.

To serve, place into bowl and drizzle with the 2 T olive oil and dust with paprika.   Serve with crackers, warm pita or naan bread or fresh vegetables.

Surprising Home-Energy Hogs

It's the small appliances that can waste the most electricity.

Digital picture frames are small, so it's hard to think of them as energy hogs. But if each U.S. household had one of these frames running around the clock, it would take five power plants to run them all, says the Electric Power Research Institute (EPRI), an electricity-focused research and development nonprofit.

Large home appliances like refrigerators and dryers are typical examples of energy-hungry devices, but energy hogs don't necessarily need to be large in size. Small devices are also collectively sucking a lot of energy from the power grid, and as these devices become commonplace their energy consumption rises exponentially. "It's the subtlety of the effect of large numbers of very small consuming devices," says Tom Reddoch, the executive director of energy utilization at EPRI.
