Recipe: Sausage Potato Casserole

The perfect casserole for meat and potato lovers! Browned, savory sausage and tender vegetables with an extra savory flavor.


Ingredients

1/4 cup plus 2 tbsp extra-virgin Olive Oil

1 lb. Louie's Smoked Sausage of your choice

1 large carrot, chopped

3 bell peppers, chopped

2 tomatoes, quartered

1 onion, cut into big chunks

5 cloves garlic, sliced

1 tsp red chili flakes

1 tsp dried oregano

1 tsp dried thyme

1 tsp dried rosemary

1 tsp dried basil

1/3 cup chopped parsley

1/2 cup chicken broth

2 large potatoes, sliced into rounds 1/2 inch or less wide

salt, to taste

pepper, to taste

1 cup panko breadcrumbs, optional

1/3 cup parmesan & mozzarella cheese blend


Directions

  • Preheat oven to 400 F.
  • Grease a 9x13 inch casserole dish.
  • Heat 2 tablespoons of olive oil in a large skillet.
  • Add the smoked sausage to the hot oil and brown on all sides, about 3-4 minutes per side. Transfer them to a plate and cut to your preferred size.
  • Place the browned sausage, carrots, bell peppers, tomatoes, and onion in the casserole dish.
  • In a separate bowl, mix the remaining olive oil with the garlic, chili flakes, oregano, thyme, rosemary, basil, and parsley.
  • Drizzle 1/4 of the seasoned olive oil over the sausage and veggies in the casserole dish.
  • Pour the chicken broth into the casserole dish.
  • Toss the potato slices with the remaining olive oil.
  • Arrange the potato slices on top of the sausage and veggies.
  • Season the potato layer with salt and pepper.
  • Sprinkle the bread crumbs and cheese over the potatoes.
  • Bake until the potatoes are cooked, about 45-50 minutes. You may cover with foil if browning too quickly.
  • Serve.

The Brat Haus earned several thousands of dollars for local non-profit groups in 2023 - benefiting local youth and community activities. The Brat Haus is now closed for the year and ready to go into winter storage. We plan to open it again in April 2024.

Please take care to handle wild game properly, especially when hunting in warm weather. Quality meat is needed to make quality sausage, ground meats, and fresh cuts.

  • Field dress the animal properly. Improper field dressing can cause rapid spoilage.
  • Cool down the animal as quickly as you can - the warmer it is, the faster spoilage will occur.
  • Trim all contamination from the meat - leaves, hair, bloodshot, etc.
  • Please use food-grade containers or packaging to store meat. Garbage bags contain scented chemicals and pesticides - and are not designed to store food!
  • We reserve the right to refuse any wild game that doesn't meet our high quality standards.
