Better Than Candy Sweet Potato Bars

You will need:
Crust
  • 1 cup graham crackers, finely ground-about 8 graham crackers
  • 1/4 cup + 2tbs VS Butter Olive Oil, plus a drizzle to coat pan
  • 3/4 cup almonds, finely ground
  • 1/2 tsp Healthy Life cinnamon (VS)
  • 1/2 teaspoon orange zest, plus extra for garnish
  • 1/4 tsp salt
Filling
  • 2 large or 3 medium sweet potatoes, such as garnet, baked until soft
  • 3 Tbsp VS Maple Balsamic Vinegar
  • 1/3 cup plain yogurt
  • 2 eggs, beaten 
  • 1 tsp Healthy Life Pumpkin Pie Spice (VS)
Instructions:
1. Preheat oven to 375 degrees. Coat an 8-inch-square baking dish with VS Butter Olive Oil. In a small bowl, combine ground graham crackers, almonds, cinnamon, orange zest and salt and mix. Add VS Butter Olive Oil and mix until the ingredients are combined and crumbly.

2. Place the mixture in the baking dish and press firmly to the bottom of the pan. Bake for about 10 minutes or until set. Remove and set aside.

3.  To make filling, bake sweet potatoes and then remove the skins. Place the potatoes in a large bowl and mash. Add VS Maple Balsamic Vinegar, yogurt, eggs, and Healthy Life Pumpkin Pie Spice and blend thoroughly.

4. Pour the filling over the crust, smooth the top with a spatula. Bake for 25 minutes or until the filling is beginning to pull away from the side of the pan.

5. Cool on a wire rack. When completely cooled, cover and refrigerate for 2 hours.

To Serve
Cut into squares and place on individual plates. Garnish with orange zest.

Variations
Blood orange, Lemon, and Lime Olive Oil work well with this recipe. Try a flavored yogurt such as peach, pineapple, blood orange, pomegranate or apple.

Dark Chocolate or Espresso Balsamic Vinegar will add depth to the flavor. For special presentation, top with whipped cream. Try baked pumpkin filling instead of sweet potatoes for a new twist.

Le Creuset French Press

Some say coffee prepared in a French press is the way every cup should be savored. Coarsely ground coffee beans are steeped in boiling water, and then filtered away by plunging the mesh sieve through the press. Direct contact between the beans and the water means a stronger flavor. You will need:

Le Creuset Dutch Oven


The Merry Peddler carries a vast variety of Le Creuset items and for fall we are loving the dutch oven for the holidays! Le Creuset Signature Enameled Cast-Iron 5-1/2-Quart Round French Oven. Also known as a Dutch oven, this updated kitchen classic enhances the cooking process by evenly distributing heat and locking in the optimal amount of moisture. We're sharing our favorite bread stuffing recipe with you to enjoy with family and guests!

Not-Your-Traditional Stuffing
You will need:
  • 14 ounces cubed bread stuffing
  • 3/4 tablespoons VS Healthy Life Turkey Seasoning and Rub or VS Healthy Life Herbs de Provence Seasoning
  • 3 tablespoons VS Maple Balsamic
  • 1/4 cup VS Fennel Olive Oil (divided)
  • 1 1/2 pounds sweet Italian sausage with fennel (removed from casing)
  • 2 1/2 cups celery (chopped)
  • 1 medium onion (chopped)
  • 3 cups cremini mushrooms (chopped)
  • 3 cups chicken stock
  • 1 stick unsalted butter
Instructions:
  1. Preheat the oven to 350 degrees F.
  2. Add the cubed bread to a large bowl and sprinkle with the VS Healthy Life Turkey Seasoning and Rub or VS Herbs de Provence Healthy Life Seasoning. Toss to coat.
  3. In a medium sized sauté pan over medium-high heat add 1 tablespoon of VS Fennel Olive Oil, 3 tablespoons of VS Maple Balsamic Vinegar and then add the crumbled sausage. Remove once browned and add to the bowl.
  4. Sauté separately the celery and onion until just translucent, about 3-4 minutes. Season with salt and pepper. Add to the bowl once cooked. Add more VS Fennel Olive Oil to the pan and cook off the cremini mushrooms. Season with salt and pepper, and once cooked, add to the bowl of stuffing ingredients.
  5. Heat the chicken stock and melt the butter inside. Pour the liquid over the stuffing and gently fold together.
  6. Put the stuffing in your greased Merry Peddler Kitchen Store Le Creuset Dutch Oven. Bake for 35 minutes covered. If you desire a crispy top, take the lid off the last 10 minutes of cooking.
