Chicken Breast with Lemon Caper Sauce | Ingredients (serves 4)
- 2 tablespoons olive oil
- 2 boneless chicken breasts, pounded, halved crossways
- 2 tablespoons drained baby capers
- 1 garlic clove, crushed
- 1/2 cup dry white wine
- 1 1/2 tablespoons lemon juice
- 1 teaspoon paprika
- 1 teaspoon ground white pepper
- 1 1/2 tablespoons salt-reduced chicken stock
- 1 teaspoon cornflour
- 1/4 cup extra-light thickened cream
Directions: Heat oil in a frying pan over medium-high heat. Combine flour, salt, paprika and white pepper. Lightly coat both sides of pounded chicken cutlets with flour mixture. Cook for 2 minutes each side, or until cooked to your liking. Transfer to a plate. Cover to keep warm. Add capers and garlic to pan. Cook, stirring, for 30 seconds. Increase heat to high. Add wine. Cook, stirring, for 1 minute or until liquid has reduced by half. Add lemon juice and stock.
Reduce heat to low. Simmer for 3 minutes. Combine cornflour and cream in a bowl. Remove pan from heat. Stir in cornflour mixture. Reduce heat to low. Simmer, stirring, for 2 to 3 minutes or until slightly thickened.
Divide chicken between plates. Top with lemon mixture.

Mike, Jason, and I arrived at Bait INC. early this morning with high hopes of catching a solid box of fish. We launched and rode that short cold ride to the HWC (Hot Water Canal).
We anchored up and started catching specks immediatly. It was fast and furious!
We used the usual setup, 1 ounce bank sinker then a barrel swivel with 5ft of 20 pound leader and a tko/zoom plastic. Pop Pop and glide with the strong current.
We fished hard until 12pm and called it a day to get ready for the playoff games.
Final catch: 71 trout all sizes 4 largemouth bass (threw back)
