This product is recognized as an award-winning producer of balsamic vinegar in the Reggio Emilia region of Italy. The balsamic stems from one ingredient of the cooked grape must of Lambrusco and Trebbiano grapes. The grapes are cooked over an open fire then the must is placed in a battery of barrels being left to age for years. These barrels are all different wood and it gives the balsamic a complex depth of flavor and incomparable to any other balsamic. 
There is also Wine Vinegars that are made from local, organic grapes just like the balsamic. These Vinegars are never diluted and produced with the with the traditional long oxidation time at natural temperatures
