Dry Aged Rump Cap from Donald Russell

This cut makes the perfect Roast Beef, and is simple to prepare, with very little needed to impress. You'll need:
3kg Rump
One of our nomu rubs
3 tbs of olive oil
Meat thermometer
- Bring the rump to room temperature before you cook it.
- Mix 5tbs of the nomu rub of your choice with the oil and rub the mixture into the beef rump.
- Place the rump into a roasting pan and cook it a pre-heated oven at 230C for 20 minutes, then reduce the heat to 100C and cook for a further 2.5 hours.
- Using your meat thermometer, check the temparure in the center of the meat. The roast is done when the temperature in the center is: 49-52 rare; 55-60 med rare; 63-66 medium; 68-74 well done.
- Remove from the oven and rest for 10-15 minutes before serving.
