We are so excited to welcome this little girl to the farm! She’ll certainly be the main attraction this year on our farm tours. Some of you may have seen the wooden cutout of a giraffe that we have mounted to our kangaroo fence. We thought, why not get a real one to join our kangaroos? Plus, giraffe milk has actually been called a “superfood” so we are excited to try it when she grows up. Meanwhile, what do you think we should name this baby girl? How about "April" … as in April Fools? :)

The April Customer of the Month is Melissa Vander Martin of Waterloo.
Melissa just moved to Waterloo last July and discovered Hansen's Dairy Waterloo when stopping at Sub City next door.
"We bought ice cream, cheese and meat," she said. "Your products are local and delicious, and the people are great."
Her favorites are Mint Chocolate Chip ice cream and Smoked Baby Swiss Cheese. "The ice cream, farm fresh eggs, beef bacon, cheese, and meat/cheese sticks — we haven't found anything we don't like," she said. "We like to try something different every time."

We're mixing it up a bit and featuring a kangaroo for April instead of a cow.
Rocket is 5 years old and the alpha male of our kangaroo mob. While that sounds intimidating, he's quite docile around people. Rocket and his wife Scooter have three joeys together: Rookie, Roodolph and Rooby.

Here's another super simple springtime recipe you can use for Sunday Brunch or with leftover Easter ham. You could also swap out the spinach for fresh asparagus when it starts popping up in a few weeks. Yay, spring!

Springtime Spinach and Bacon Egg Bake

Total Time: 1 hr, 15 min
Servings: 6 or more

Ingredients

- 1 pkg 12 oz Beeler’s Bacon*
- 10-12 oz Beeler’s Ham (about half of the larger packages sold at Hansen’s stores)*
- 1 Tbsp Hansen’s Dairy Butter*
- 12 large eggs*
- ½ cup Hansen’s Dairy Milk*
- 1 pkg Bongards Shredded Cheddar Cheese*
- 2 cups spinach leaves (about 3 oz)
- 1 small to medium onion**
- Westby’s Sour Cream* (optional)
- Kramer’s Salsa* (optional)

- Preheat oven to 350F.
- Grease 9 x 13 baking dish with butter.
- Cut bacon strips into fourths, lengthwise, and lay half of them on the bottom of the baking dish.
- Dice onion and set aside.
- Chop spinach into 1 – 1½-inch pieces and set aside.
- Chop ham into ½-inch chunks and set aside.
- Crack eggs into large mixing bowl and beat until well mixed. Add milk and mix well.
- Add ham, onion, spinach and ½ package (about 1 cup) cheese and mix well.
- Pour over bacon.
- Sprinkle rest of cheese on top.
- Lay rest of bacon on top of cheese.
- Bake at 350 for about 60 minutes or until knife inserted to center comes out clean.
- Top with sour cream and salsa if desired.
- Enjoy!
