Good Afternoon Seafood Fanatics:

We are putting together a nice local seafood variety for you this week.  As is usually the case, some NC fisheries have slowed a bit while others are heating up.  

 Sinknet Fishermen working off the beach have been getting good catches of Sea Mullet, Bluefish, Popeye Mullet and also Sharks.   Sea Mullet love to eat shrimp so you can imagine how they make a tasty meal. For our dedicated grill masters we will have Shark steaks available. 

 Speckled Trout have been making good showings during chilly nights, so we will have a good supply this weekend.  One fish can be broiled or baked with your favorite veggies to make a healthy yet filling meal for two.

We continue to catch Blue Crabs in good numbers, and we have a few more weeks left of fresh shrimp in NC/SC.  This time of year the supply of both these products is very dependent on how quickly it gets cold.  We could have fresh shrimp right through Christmas, or it can stop as early as the first week in December.  As far as the crabs go we will be potting for them through the first of the year.  

Since Grouper has closed it has kept a lot of offshore bottom fisherman from going out because there is not much for them to catch.  If you love your Local Grouper we have a limited quantity of vacuum sealed boneless, skinless, fillets that were processed and quick frozen by us, available.   Because our offshore availability has slowed to a crawl, we have some beautiful Costa Rican Mahi Mahi, and Alaskan Cod available this weekend.  We are working with reputable suppliers to get more variety in our store during seasonal closures.

Virginia Mullet, AKA Sea Mullet,  AKA Whiting, aka Roundhead                                                                                

 These fish have more names than any other fish we sell because there are different varieties all over the world.  In the late fall and early spring we get runs of these fish, and they are one of our favorite pan fish here at Seaview Crab Company. These are larger mullet so we can dress, filet,  or leave them whole.  If you are looking for something for the fry pan with mild to medium flavor this is your fish.  A little salt, pepper and breader is all this fish needs to make a nice local seafood dinner.

N.C. Shark 

Ever been scared about that fin that pops up next to you while your swimming in the ocean.  Forget about your fear and show those fish whose at the top of the food chain.   Shark steaks are a delicious undervalued steak-like fish that works great on the grill.  If you need a recipe, marinate the shark in teriyaki, brown sugar, and lemon juice for 4-5 hours, then add butter and garlic powder. Cook the steaks on the grill for 5-8 minutes, turn them and broil some more untill shark flakes.

Speckled Trout

Trout is a Fall/Winter time gem in Southeastern, NC.  These fish are caught right in the surf or in the nearby sounds.  Known for their beautiful colors and excellent table fare, these fish can be cooked in many different ways.    They do great either left whole or filleted off the bone.  Let the fish sit in your favorite marinade and you can't go wrong.       

 Popular cooking Techniques:  Fried, Grilled, Baked, broiled.

Flavor:  mild to medium

Texture:  medium firmness.
