NEW ORLEANS (May 25, 2024) - I just published Episode 8. Click here or on the image below for this latest Episode 8 of "Golden Agers Jammin' in New Orleans - Mother's Day Shrimp Curry.
Episode 8 came about when the Friday before Mother's Day 2024, my Boo who was in the kitchen frying us some delicious catfish mentioned, with some angst, "you know you haven't cooked in quite a while". She was correct and her timing was perfect. I had a chance to step up for Mother's Day.
You don't stay happily married for 53 years without holding up your end.
I'm really persnickety when I cook. I only want to use fresh ingredients when I can. I did settle for canned coconut milk, bamboo shoots, and packaged cayenne pepper. (I have cayenne plants in the garden this year.) So Saturday morning I was on a mission to buy, prep and combine the elements of this very tasty and equally healthy stable dish that my Boo absolutely enjoys.
I'm confident that my effort helped my Boo feel valued and appreciated by the father of her children. Mission accomplished!
Last time I posted a photo of this shrimp curry on Facebook, many people asked for the recipe, so this time as I cooked, I used my Osmo Pocket 3 video camera to capture the process which took several hours. I'm pleased that I was able to condense the process into just over 17 minutes, but hopefully provide enough details about the process to help others have success with the dish, just remember to add salt to your taste.
You will notice that this "fun" channel of mine is still evolving, now including three episodes about adventures in the kitchen. I get a real kick out of cooking... and eating delicious food made from fresh ingredients. I lean into low fat and high nutrition... trying to stay on the planet, jammin' as long as possible. Hope you enjoy the additions.
