Happy New Year!
2023, here we come!

I hope that as we start off this new year you have a renewed sense of strength and peace. 2022 certainly had its ups and downs, but each experience came with personal and professional growth. I'm looking forward to seeing what 2023 brings our way. KCL is ready to continue to serve the Commonwealth.

Thanks for coming alongside us to be a link to hope.

Cheers!

Melissa

Out and About
Melanie, our community outreach director, attended a health & wellness event, in Lexington, at the new Tates Creek High School on Friday, Dec. 2. Sponsored by the PTSA, the event featured wellness groups from the Lexington area. The goal of the event was to raise awareness of various public health concerns.
A very special "Thank You" to Kendra Scott for inviting KCL to host an event online and in-store on Dec. 9th & 10th. The "Gives Back" event allows 20% of the proceeds to be donated to support the mission of KCL. Our director of community outreach, Melanie, was in attendance on Friday evening and had the opportunity to share the mission of KCL with attendees.
Melissa & Melanie attended the UK Markey Cancer Center Affiliate Network cancer care conference on 12/15/22. Melissa participated in a panel discussion about mental health and support services for cancer patients during covid and both had the opportunity to benefit from a pet therapy session with "Falkor", one of UK Healthcare Integrative Medicine's canine counselors.

Italian Chopped Salad

This "famous" recipe is simple and delicious and easy to create. The garbanzo beans provide a great source of protein and fiber. You can add some grilled chicken for even more protein as an option.

Buffalo Chicken Soup

If you love all things spicy & full of flavor, you'll love this recipe. Creamy and cheesy delicious, this buffalo chicken soup recipe is perfect as a starter or for the main entree. Made with lots of veggies, tender chicken and cheese, it's sure to warm you up on a cold day.

Bacon & Gruyere Egg Bites

Admittedly, I am slightly obsessed with these little bites of deliciousness and decided I needed to find a way to make these at home for a fraction of the cost. The key is to blend all the ingredients together in a blender to get that creamy texture. You can use a variety of ingredients to suit your taste. These bites are low carb & packed with protein.
