Alto Valle from Lark's Meadow Farm is Back!

Alto ValleWe are excited to have Alto Valle back at Cheese Bar!
Alto Valle is a rich and creamy washed rind sheep's milk cheese made in Rexburg, Idaho. This raw milk washed rind cheese brings a touch of the barn to its silky paste.

Lark's Meadow Farm is a third and fourth generation farmstead creamery. Kendall Russell and his family raise sheep and cows to provide milk for cheesemaking and are dedicated to natural and organic farming methods. Using traditional techniques and American innovation Kendall created Alto Valle, the first sheep's s milk cheese made using thistle rennet in the United States.

Alto Valle was
the crowd favorite at the Portland Beer and Cheese Fest last weekend. We were lucky to get a number of wheels of this raw sheep's milk cheese directly from Kendall Russell. For a limited time we will be selling the 12 oz wheels for just $14.90.

Please come by the shop and have a taste!

Black Sheep Creamery's seasonal Fresh Brebis is back in stock. Rich, fluffy, fresh, and tangy! Pair this fresh sheep's milk cheese summer fruits or use it in place of ricotta in your favorite recipes.

Summer Sippers Wine Tasting, Thursday, June 22nd, 5:30-7:30 pm

Please join us tomorrow evening as Cheese Bar's Elissa Kilkenny pours three delightful, easy drinking summer wines.

Here is what Elissa will be pouring:

2015 Prisma, Sauvignon Blanc, Casablanca Valley, Chile
  • This hand-harvested, un-oaked, 100% Sauvignon Blanc is produced from a blend of three Casablanca Valley vineyards: El Ensueño, Belén, and El Principal. The sandy, clay soils and cool, coastal climate contribute to a bright, fresh character in the wine. Citrus notes of lemon, lime, and grapefruit, combined with a mineral undertone lead to a crisp, elegant, and well-balanced finish.
2015 Bisson, Glera Frizzante, Liguaria, Italy
  • Pierluigi Lugano began the Bisson winery in 1978 when he fell in love with the wines of the Ligurian coastline. Incredibly refreshing with sundry hints of saline, minerals, citrus and herbs, this dry sparkler is made from Italy's ancient Glera grape (best known as Prosecco). The traditional bottle cap closure provides joyous accessibility for outdoor patio or beach dining.

2016 Matthieu Torquebiau, "L'Hermas," Rose of Grenache, Languedoc, France
  • When Matthieu Torquebiau started Domaine l'Hermas in 2004, he was looking for a particular type of terroir. He wanted an elevated parcel of garrigue, with northern exposure, close to the family property. This "Hermas" (abandoned land in Occitan) was finally discovered, he cleared the land and planted Syrah and Mourvèdre. Today the domaine extends over approximately 10 hectares.

As usual the tasting is complimentary and the wines are discounted tomorrow night only. See you there!
