June's VIB of the Month is
Bob Sandage
The Wrecking Bar Brewpub would like to raise a glass to our VIB of the Month (Very Important Brewer), owner and brewmaster emeritus Bob Sandage.
We generally dedicate this section of our e-newsletter to highlighting a dynamic local homebrewer but with our fourth anniversary approaching we thought we would check in with Bob about where the Wrecking Bar has been and his plans for the future.
In which neighborhood do you live?
That is a dynamic question. I have been living in an apartment in Virginia Highlands / Morningside area since last July but am transitioning to Clarkston and eventually will probably settle in Decatur / Oakhurst in the next year.
Take us back, what was it like for you when the Wrecking Bar Brewpub opened four years ago and you saw your dream become a reality?
It was literally one of the best feelings of my life! I was raised by a "technical" dad learning electronics, was an electrical equipment repairman in The Marines, an electrical engineering graduate at Iowa State, and then began my own engineering consulting firm in 1994. I loved being an engineer up to the day I sold my engineering company in 2009. But, starting in college I REALLY developed a passion for craft beer and put together my first business plan for a brewpub in 2002. I knew someday I would create my own brewpub, and it was amazing how the planets aligned to get to the Wrecking Bar Brewpub. Three days before I sold my engineering company, the old Wrecking Bar architectural antique store property at 292 Moreland Avenue went into foreclosure. I now had freedom in terms of time, and the capital necessary. The space was much bigger than my original business plan, and luckily I had a good team to "balance" me and convince me that I needed the right people for various positions and not to try to be in unfamiliar roles (pretty much everything!). To see the whole team - managers, bartenders, kitchen team, brewmaster, servers - waiting for our first customers and more than ready to help realize my dream. An incredible, incredible feeling!
Your goal was to have one of the top rated brewpubs in the country. Do you think you've accomplished that and if not, what do you still need to do?
Before we opened, I stated that I wanted the Wrecking Bar Brewpub to be one of the Top 5 Brewpubs in the US within three years of opening. I probably need to have an "unbiased" source put it together, but if you scour RateBeer and Beer Advocate, there are only about a dozen US brewpubs per year that are rated World Class on both sites. Combining place and beer averages from those sites and also factoring in Untappd beer averages, the Wrecking Bar Brewpub has hovered between the 6th to 8th best brewpub in the US since year two after opening. This is a HUGE accomplishment! I am very familiar with most of the brewpubs on the World Class list, and a common element that many of those above us have is an established sour beer / wild ale program. I know we have better quality of food and service than any of those above us on the list, but more fully fleshing out our sour / wild program will be key to us moving up on the list. All this said, I am thrilled and honored to be where we are at today in relation to other US brewpubs. Everyone at the Wrecking Bar Brewpub does all they can to try to make us the best.
A lot has changed for you personally and professionally since we talked to you two years ago. On April 20, you purchased Dillwood Farms and plan to develop a brewery on the property called the Wrecking Barn. While there will be obvious ties, this is a different venture and not just a second location of the Wrecking Bar. Tell us about your plans for the farm.
First, yes, much has changed for me. Personally, my spouse and business partner is now just my business partner. While the Wrecking Bar was my dream and passion, she and her family supported me and I wouldn't have been able to realize my dreams otherwise and I will remain grateful to her and her family.
Professionally, I turned the role of Brewmaster over to Neal Engleman at the beginning of 2014. This has allowed me to focus much of my efforts on a new business venture, which brings me to that part of the question.
There are still questions in regards to ownership and name that need to be determined. What is for sure is that this will not be a brewpub or just an extension of the Wrecking Bar Brewpub. There are several phases to what we wish to do in Loganville and we are patient (we refers to myself and business partner Stevenson Rosslow). The first phase is going to just be us getting our arms around the farm piece. It has been a farm since the 1960s, but being on/off the market for several years has put us in a position where there is much we need to focus on to sustain the farm operations so that we can expand in the future (only about 6 of 62 acres are currently farmed). For this first growing season in 2015, we will focus just on the farm operations. The first phase of brewing operations will likely be just the infrastructure to begin a sizeable sour beer / wild ale program, and we may likely, at first, buy wort from the Wrecking Bar Brewpub or other breweries. This likely won't happen until mid-2016 at the earliest. Phase II of the brewery plan will be to put in a brewhouse and fermenters for larger-scale brewing. This will likely be a 30-50 barrel brewhouse and fermenters sized at 4x. How close this happens to Phase I is still to be determined.
You stepped down as Brewmaster at the Wrecking Bar a few years ago, will you be more involved in the brewing at the Wrecking Barn?
Yes. I don't start a business in which I am not intimately involved at the beginning.
Will the same Wrecking Bar recipes we've come to know and love be brewed at the Wrecking Barn?
A tough question that has many aspects yet to be determined. But, as I said above, Phase I will start with development of many exciting beers unique to the Loganville operation.
Will having a commercial brewery have any impact on the Wrecking Bar's distribution?
No. The Wrecking Bar will continue to grow it's yearly distributed volume as it has in the past couple years.
In addition to the tasting room, the Wrecking Barn will also have an event space, correct?
Yes, we have space planned for more than 200 parking spaces and an event space in the brewery. Events of up to 300-500 people will be able to be accommodated, with a combination of both scenic farm environment and brewery/ indoor room available.
Speaking of events, the Wrecking Bar has hosted three successful beer festivals - two Strong Beer Festivals and a Wild Beer Festival in May. Do you plan to do more of that at both locations?
These two festivals will most definitely continue and provide Atlanta beer enthusiasts with a unique experience. As a team, we will decide if new festivals will be added, and I can say that larger festivals would be possible in Loganville.
And the farm will grow food the Wrecking Bar Brewpub will be able to incorporate in their menu. Tell us about what kind of crops are being produced and planned?
Traditionally, this has been blueberries, several varieties each of tomatoes, potatoes, lettuces, carrots, turnips, etc. We will continue to grow these items and add more if it makes sense. And, it is quite likely that we would grow some hops that are friendly to growing conditions in Georgia!
Will this new venture at the Wrecking Barn impact your involvement at the Wrecking Bar?
I will continue to be quite involved at the Wrecking Bar. After all, it's my baby!
And finally, this may be either the hardest or the easiest question but since we ask everyone, here goes (we'll see if anything has changed since last we asked you) - what do you love most about the Wrecking Bar Brew?
I love the staff at the Wrecking Bar. Everyone takes pride in the job they do, it shows, and it has helped us be hugely successful. We couldn't do it without their dedication and enthusiasm. And, I love seeing friends and customers enjoy their experience at the pub. It is amazing seeing both the employees and the customers they are serving happy being at the Wrecking Bar Brewpub!
