Galatoire's Godchaux Salad

There's nothing like a cool crisp Godchaux Salad on a hot summer day! Back in the 1920s, Mr. Leon Godchaux would make the short walk to Galatoire's from his family's elegant namesake department store on Canal Street every day. Overheated from the walk, in the warmer months, Mr. Godchaux would request that a salad containing all of his favorite things be composed just for him. Over the years Mr. Godchaux's eponymous salad has become a mainstay on the Galatoire's menu. The bright, acidic tang of the Creole mustard-based dressing cuts cleanly through the richness of the lump crab, shrimp, and hard-boiled eggs.

Ingredients

  • 1 medium head iceberg lettuce, washed, dried and torn into bite-sized pieces
  • 2 large tomatoes, preferably Creole, cored and cut into large bite-sized pieces
  • 1 pound jumbo lump crabmeat, cleaned
  • 30 large Gulf shrimp, boiled and peeled
  • 3 hard-boiled eggs, chopped
  • 12 anchovy filets
  • Creole Vinaigrette Dressing (see below or click for recipe)


Directions

In a large bowl, combine lettuce, tomatoes, crabmeat, and shrimp. Gradually add the dressing to the salad, according to your preference, and toss gently until all ingredients are well coated.

Divide the salad mixture onto 6 chilled plates. Garnish each salad with chopped egg and 2 anchovy filets.

Extra dressing can be served on the side.


Creole Vinaigrette Dressing

  • 1/3 cup red wine vinegar
  • 1/2 cup Creole mustard or any coarse, grainy brown mustard
  • Salt and freshly ground black pepper
  • 2/3 cup vegetable oil

Combine all ingredients except oil in a bowl; whisk. Drizzle oil in slowly while whisking constantly.
