Celebrate summer, friends, and all things pink on National Rosé Day! Not many people need an excuse to open a fresh bottle of rosé wine. Held every year on the second Saturday in June, this year falling on June 12, National Rosé Day was started by Swedish Rosé house Bodvár to pay homage to this glorious summertime wine. Whether you prefer your rosé still or bubbly, sweet or dry, deep pink or more orange, raise a glass to this perfect summer sipper.

Rosé wine is winning friends and becoming increasingly popular, thanks to its freshness, fragrantly spicy aromas, and appealing color. It has long since shed the reputation of being “neither fish nor flesh”. Austria offers a wide range of rosé; some are particularly delicate, while others can be racy or powerful – a few of them even with protected designation of origin!
SAIGNÉE METHOD
In the saignée method (French: la saignée = bloodletting), rosé is a partial product of red wine vinification. Red wine grapes are pressed, and after a few hours to a day resting on the skins, about 10–20% of the must is drawn off; the maceration vessels are – so to speak – bled. The juice extracted is processed into rosé, and the rest of the must into red wine. Due to the reduced ratio of juice to skin, this red wine will have a more intense colour and more prominent tannin.
DIRECT PRESSING
Grapes are crushed after the harvest and subsequently remain on the skins as long as necessary (and as briefly as possible). The longer this contact lasts, the darker the shade of pink, but also the more intense the flavour of the rosé. This methodical way of making rosé results in many different shades of colour.
After the juice has been drawn off the skins, vinification proceeds in the same way as with white wine.
This method – in contrast to the saignée process – is already working towards rosé in the vineyard (for example less defoliation and earlier harvesting, in order to obtain less tannin and good acidic structure), the result is usually more delicate, refined and higher-quality rosé wines.

The vineyards are flatter and receive less direct sunlight, so they are somewhat cooler.
The wines display more minerality and are noticeably more acidic, which stays in the foreground not through sheer force, but rather through its finesse and spicy flavors.

food pairing This is a great pasta dish wine, it goes also well with shellfish, any dishes with white poultry, and salads with tomatoes and eggplants.

Anton Bauer, Fal­staff Wine­maker of the Year 2017, represents the 4th generation in his family to manage the now 29-hectare winery. After his graduation from the School of Wine and Fruit Growing in Krems, Lower Austria, and training in Burgundy, France, he worked for more than four years as an oenologist with a renowned Lower Austrian winery. Since 1992, when Anton took over the winery from his parents, at that time 3,2-hectares, he has uncompromisingly pursued his ideas of quality, paying attention to highlighting the typical regional features and the terroir character of the wines that make them incomparable and unique.
