10 Years of IDDSI - Focusing on Flow

In our June 2023 e-bite, we highlighted the different testing methods that can be used to help ensure foods and fluids are correctly prepared before being served. One of the main methods for testing thickened liquids (and liquidized foods) is the IDDSI Flow Test. Click here to watch the IDDSI flow test video.

The IDDSI Flow Test for liquids uses a 10 ml syringe with a barrel size of 61.5 mm or the newly available IDDSI Funnel to quantify the flow rate when 10 mls runs with gravity through the syringe for 10 seconds. The remaining liquid in the syringe determines the IDDSI level of thickness. It is reliable and accurate which was confirmed in tests performed by the research community and international medical products industries. The IDDSI Flow test is based on the Posthumus funnel concept which has been used for many decades in the dairy industry to audit the thickness of milk, cream, yoghurt & custard. The geometry of the syringe allows for both shear and elongation flow types which represent flow conditions within the oral cavity and pharynx

Viscosity is often thought of when considering liquid thickness however the IDDSI framework does not use viscosity values for identifying texture modified products for the following reasons:
- It is not scientifically correct: Viscosity is used to describe Newtonian liquids (e.g. water, oil) however almost all thick drinks have shear-thinning non-Newtonian behavior. Their “apparent viscosity” depends on how they are tested.
- It’s not specific enough: Two different liquid types (e.g. gum- vs starch-thickened) with exactly the same measured viscosity at any given shear rate (e.g. 50 /s) will not have the same measured viscosity at any other different shear rate. Nor will they necessarily appear the same or behave the same way when swallowed.
- It is not practical: Specialised, expensive equipment is required (e.g. rheometer / viscometer with cone-plate attachment) which is not available in health and community care settings.
So why use the IDDSI Flow test?
- It is reliable and accurate and provides an objective method of ensuring individuals with dysphagia receive the recommended consistency.
- It is inexpensive, accessible and easy to perform.
- It can be used to test any type of liquid provided it does not contain lumps, particles or seeds which clog the tip. Naturally thick drinks or smooth cream soups, sauces can be tested as well as drinks using commercial thickener products.

The International Dysphagia Diet Standardisation Initiative (IDDSI) is delighted to be hosting its 3rd IDDSI Festival in Derby, UK on Thursday, September 21st, 2023. This event is an ideal opportunity to engage with you and share best practices being demonstrated around IDDSI in Health and Social Care settings. The event is open to all who deliver IDDSI framework, including clinical professionals, dieticians, speech and language therapists, caterers, chefs, patient groups and suppliers.

Canada IDDSI Festival - October 26, 2023

The International Dysphagia Diet Standardisation Initiative (IDDSI) and the Canada IDDSI Reference Group are delighted to announce that we are hosting our first annual Canadian IDDSI Festival on Thursday, October 26, 2023, at Humber College in Toronto, ON. This event is an ideal opportunity to network, discuss best practices and learn about innovations to support IDDSI implementation in Canada. The event is open to everyone who supports and/or implements the IDDSI framework.
The Canada IDDSI Festival will feature Dr. Catriona Steele, ASHA Fellow, Canada Research Chair in Swallowing and Oral Food Processing and Marianne Katusin, Director of Support Services, Halton Healthcare as our keynote presenters with an opening welcome & IDDSI global update from Peter Lam, IDDSI Chairperson & CEO. There will also be a panel discussion to address IDDSI challenges, innovations and solutions. Participate in practical demos and hands-on learning workshops. Visit with vendors and discuss with them your IDDSI wish lists. The event aims to inspire delegates to put theory into practice to support residents and patients with dysphagia. IDDSI Participates with a Bang in Latin America
The Third Congress of the Latin American Dysphagia Society and the First Congress of the Chilean Dysphagia Society was celebrated from July 19-22/23. IDDSI was very much “presente” with a pre-conference hands-on workshop, led by our Vice-Chair, Dr. Luis F. Riquelme. There was also an IDDSI booth in the exhibit hall, thanks to the fine coordination of Brazil IRG leader, Dr. Renata Mancopes. IDDSI also wishes to extend a big thanks the many IRG leaders that also volunteered to cover the booth.
This was the first time the IRG leaders from 7 Latin American countries were meeting in person, so a special meeting with the leaders to share accomplishments, discuss challenges and look to the future. During the congress, IDDSI also held a Q&A session, where Dr. Riquelme and Dr. Mancopes answered questions from participants. The IDDSI spirit was prevalent throughout the conference!

The IDDSI Funnel is the only widely available funnel that was designed with the IDDSI Flow Test in mind. The IDDSI Funnel is designed to be easy to use with IDDSI levels already marked on the funnel itself, and it is re-usable and recyclable. The funnel store (including ordering and fulfillment) will be managed by our licensed manufacturer, Sparrow Solutions Ltd., and will be an official channel to order your IDDSI Funnels

- IDDSI Funnels are sold in packages (100 funnels per package) or cartons (1000 funnels per carton)

IDDSI IRG LEADERS : On July 13/23 leaders for the many IDDSI Reference groups came together for updates from IDDSI Global and a chance to share updates from the groups. Thirty-four groups provided updates on what their top projects were, what challenges they have experienced and what tips or words of wisdom they could share with others. It was incredible to hear about all the projects, initiatives and collaborations going on and we are so grateful for the energy and enthusiasm of the IRG leaders and all the volunteers.
