Mini Pizza Meat Loaves
Makes 8 Servings
INGREDIENTS:
1 cup Fiber One original bran cereal
1 can (15 oz) organic pizza sauce
1/4 cup fat free (skim) milk
3/4 cup coarsely chopped turkey pepperoni
1/4 cup egg whites
1 tsp dried oregano leaves
1/4 tsp salt
1.5 lb extra lean (93%) ground beef*
1/2 cup shredded reduced fat mozzarella cheese
INSTRUCTIONS: Heat oven to 450 degrees. Place cereal in resealable food storage plastic bag; finely crush with rolling pin or meat mallet (or finely crush in food processor). In a small bowl, reserve 3/4 of the pizza sauce. In a large bowl, stir together the crushed cereal, remaining pizza sauce and milk (mixture will be thick). Let stand 5 minutes. Add 1/2 of the chopped pepperoni, egg whites, oregano and salt to cereal mixture. Stir well until blended. Add ground beef; stir well until mixed. Spray 15x10 inch pan with cooking spray. Place meat mixture into the pan; pat into rectangle. Cut lengthwise down center and then crosswise into quarters to form 8 loaves. Separate loaves using spatula, so no edges are touching. Spoon reserved pizza sauce on top of each loaf; spread evenly to cover top. Bake 20 - 25 minutes until loaves are longer pink in center. Meanwhile, in a small bowl mix remaining 1/4 cup chopped pepperoni with the cheese. Sprinkle evenly over the top of each loaf. Bake 3 - 5 minutes longer or until cheese is melted. *you can substitute lean ground turkey instead of the beef |
