Well that was a quick 28 days!!! And it looks like March is going to fly by as well with all the great stuff happening, not just down here on the Bayfront, but all over Pensacola. We are making some great progress up the street and we plan to keep you informed every step of the way. One of those little announcements deals with our chefs here at Jaco's, you can read more about that below.




Make sure you have marked your calendars now for the Bayfront Wine Festival coming up April 4th and 5th. While you mark your calendars, you might want to go ahead and purchase your tickets to the 4 course wine paired dinner Friday night. It is a limited seating event and tickets are selling fast. About our Chefs
 

We are very proud to announce that long our standing Chef for Jaco's, Tricia Horton, will be taking the reigns as Executive Chef for Jaco's and the new V. Paul's Italien. Taking over the daily operations of the Jaco's kitchen will be Chef Amy Potmesil. We are excited to see the traditions of our family style kitchen continue under Chef Amy and all of the new creations that will come out of the V. Pauls menu.

 

 

Chef Tricia Hortonchef


Tricia graduated at the top of her class receiving a Culinary Arts degree from the prestigious Art Institute of Atlanta. From there she has had the opportunity to work along side many talented Chefs in Atlanta, Georgia including Chef Paul Albrecht of Pano and Paul's and Paul's Sushi and Bistro.

She expanded her skills during her tour of Italy where she was able to use the finest and freshest ingredients. It is with her many experiences that she has developed her own unique style of blending various flavors and spices that will arouse the senses. Her individuality more than shines in her creations through the explosion of flavors on your taste buds. When creating her dishes Chef Tricia takes the time to perfect the pairing of distinct tastes and textures in order to assemble a mouth watering dish.

 

In addition to all her training and amazing history with Jacos, Tricia also teaches 'Intro to Culinary Production' at PSC, has been voted Best Up and Coming Chef, and has been a guest chef at Children's Home Society, Pace Center for Girls, and Suite Soiree

 

Having spent time in Tuscany Italy, you can be sure she will bring an authentic and unique taste to the V. Paul's menu!

 

 

 

Chef Amy Potmesil

 

Amy was born and raised in Pensacola, Fl. She attended Pine Forest High School and graduated in 1998. After high school, she attended Florida State University and earned a B.S. in Psychology. While working towards her degree at FSU she discovered a passion for the culinary arts. Shortly after graduation, Amy packed up and headed to Atlanta to pursue her dreams of becoming a chef. She attended the Art Institue of Atlanta, graduating magna cum laude with a culinary arts A.A. She had the privilege to work and be mentored by nationally recognized chefs such as Richard Blais, Kevin Rathbun, and Scott Serpas. She defines her cooking style as contemporary American and enjoys surprising diners with bold flavors and clever techniques. When not in the kitchen, Amy enjoys traveling, music, and spending time with her friends and family. She is excited to take the helm at Jacos and bring her fun, unique cooking style to Pensacola.  

 

Featured Employee            Ashley Watts
Hello! My name is Ashley Watts and I am a hostess at Jaco's. I have been employed at Jaco's for a year and half and love overlooking the marina and beautiful sunsets while I work. I have been in customer service for over 15 years, between working at Flounder's on Pensacola Beach and a flight attendant. I spend my summer days on the beach reading books and when the fall rolls around I enjoy getting together with good friends to watch the New Orleans Saints play. I look forward to seeing you on your next visit to Jaco's! Thanks, Ashley

Wednesday March 5th           
art a la carte

This has been an amazing Art � la carte! We have had so much fun featuring the PSC advanced photography students Sunset Photo Contest. Thank you all for your votes and showing your support for these students as they work on their careers and passion. We have had a ton of vote, well over 700 in the restaurant and online, and are still tallying the last couple days worth. At last count it was a close tie for 1st place with only 9 votes seperating them. Once we get them all counted, we will make a special announcement next week with the winner and honorable mention(hopefully with a photo of them holding their photo and trophy). Stay tuned we should have that all out to you by Tuesday of next week!

Don't forget to join us this coming Wednesday, March 5th from 5-8pm, when we bring in our new featured artist, David Corliss, all the way down from Birmingham...and Perdido Key!

Bayfront Wine Festival
April 4th & 5th
 
Well it isn't exactly new. You probably remember all the fun of Spring Fling on the Bayfront the last two years. Some of you may have even been around Pensacola long enough to remember that the Original Pensacola Wine Festival used to take place right there, where the Bayfront Auditorium was. We felt that a new name only made sense. You can go to a wine festival just about anywhere, but how many of them take place with the spectacular backdrop of our beautiful Bayfront.

This year will be even more exciting as we add a few new options for everyone. Not only will we have an extensive selection of wines to sample and purchase but this year we will add a Beer Garden with select beers from New Belgium(Fat Tire & Ranger to name a few) and Abita, and also a Craft Bourbon Tent with selections from Angel's Envy and Hudson.

Everyone enjoyed the Wine Paired Dinner so much that we are bringing it back and making it bigger and better. Chef Tricia is working on the unique menu now that will be paired with some great exclusive wines. We will post a full menu including the wines in a couple weeks. This will be a limited seating event so don't wait to reserve your spot!
