There is a season for everything. For me, I don't even bother with BLT sandwiches in the winter when fresh tomatoes aren't around.

This week, the stars aligned and lettuce was ready to harvest, the tomatoes are ripe, and the bacon is smoked. To top things off, we had to separate a ton of eggs last week to make more chiffon rolls, so the yolks went right into the obvious - homemade mayonnaise (as featured in the large share)!

PEACH PIE
This week just might be my favorite week so far. I can't say there are any pies that I don't like, but there are a few that I really like. Peach is probably my favorite.

And the next question is whether or not it is best enjoyed cold or slightly warm. For some pies, there is no grey area. Apple pie - should always be warm. Pumpkin pie - cold. Peach pie? Well, I'll need to try it both ways again and cast the tie breaking vote.

As with all our pies, we start with our signature crust of Minerva butter, house rendered pork lard, and whole wheat flour from Stutzmans.

The filling is simple and slightly sweetened. Red Haven peaches from Eshleman's are stewed down to make a firm but fork-tender filling. A lattice top crust is applied to allow steam to escape, and the pies are baked to a golden brown finish.
