LLG Goes Green


Lanier Law Group has stepped up being green!


Summer Foster, our SSD Disability Representative, recently enlisted a group of employees interested in recycling and waste prevention. New collection systems have been placed throughout the central areas. A kitchen compost bucket encourages employees to toss food scraps, coffee grinds, filters and tea bags into it. A compost bin outside sits by our newly constructed garden beds and will provide organic fertilizer for the summer vegetables. And a pollinator garden is additionally in the works!

The Great Egg Hunt is On!


The Easter Bunny visited Lanier Law Group and everybunny was seen running about using whatever they could to gather their eggs. Eggs were hidden in and outside and some prize eggs were found by quite a few lucky hunters!

Chicken & Asparagus Fettuccini

This chicken Alfredo with asparagus recipe is rich and filling and one serving goes a long way. Serve with crusty bread and a salad to make a complete and hearty meal. I like to use the frozen garlic cubes found at Trader Joe's or ALDI to replace the garlic powder. I saute the garlic with asparagus and add mushrooms since my family can't stand limp asparagus which boiling can do pretty quickly!

Ingredients:


  • 12 ounces dry fettuccini pasta


  • 2 cups (1-inch pieces) fresh asparagus


  • ½ cup butter


  • 2 cups half-and-half cream


  • ¼ teaspoon garlic powder


  • ¼ teaspoon ground black pepper


  • 1 pinch cayenne pepper


  • ¾ cup grated Parmesan cheese


  • ½ pound cooked chicken breasts, cut into bite size pieces

Directions:


Step 1


Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, or until al dente. Add asparagus during the last 3 to 5 minutes of cooking. Drain, and transfer to a large bowl.


Step 2


In a large saucepan over medium heat, combine butter and half-and-half. Cook until thick and bubbly. Season with garlic powder, black pepper, and cayenne pepper. Stir in Parmesan cheese and chicken, and heat through.


Step 3


Pour sauce over pasta and asparagus, and toss to coat.
