Employee Spotlight


Brandi Martin recently celebrated her 20th year at Lanier Law Group. She started her career with us in an entry level position when she was 22 years old. Over the years, Brandi moved up the ranks to become a paralegal, then a licensed insurance adjuster and now is our Statewide Practice Manager. Brandi has her hands in nearly everything involving the functioning of our firm.


Brandi married her Trinity High School sweetheart, Jason Martin, a couple of months after she started at LLG and they will be celebrating their 20th anniversary in May. We have watched her become the mom to 4 boys. And recently, her oldest son, Tiler, started working in our accounting department.


Outside of the workplace, Brandi enjoys reading and spending time at the beach and pool with friends and family. We are grateful to Brandi for her loyalty and dedication.

Lamb Lollipops: Lamb Chops with Garlic & Rosemary

With Easter just around the corner, lamb chops are the perfect holiday treat. These lamb chops seared to perfection in a cast iron skillet and drizzled with garlic and rosemary-infused drippings are just the thing to elevate your holiday meal. If you don’t have a cast iron skillet, any skillet will suffice. And they are super-fast and super easy!

Servings: 2


Ingredients

  • 8 lamb chops usually 1 inch thick – Lollipop style with full bone in
  • 2 tablespoons olive oil – garlic infused if possible (if not use some garlic powder)
  • 2 whole garlic cloves peeled.
  • 2-3 sprigs of fresh rosemary
  • 2 tablespoons unsalted butter
  • salt and pepper to taste.

Instructions

  1. Let lamb rest on the counter for 20-30 minutes before cooking. Season each side of lamb liberally with salt and pepper.
  2. Heat olive oil in a cast iron skillet on medium-high heat. Wait until the skillet is nice and warm. Sear for 4-5 minutes per side, for medium.
  3. In the last 2 minutes, add butter, garlic, and rosemary to the edge of the skillet. Briefly tilt the pan so the drippings, butter, herbs, and garlic can sizzle together. When the chops are done, spoon the butter/juices over the chops to flavor. Remove from the pan and let rest for 5 minutes before serving.
  4. Use a meat thermometer to get the perfect temperature.
