It is summer and at Lanier Law Group, that means we are all about our summer interns. This summer we are pleased to have two interns from Carolina Friends School who chose to do their End of Year Experience internships with us. Roz and Leigha had a blast and learned a lot. They even got to pretend to be lawyers in a federal court house while our own Ashley Sappenfield pretended to be the judge.

We are also proud to have Allison ​​​​​​​​​Heitchue who is a rising 3L at Campbell Law School back with us for her final summer of law school. And Lisa Lanier's oldest child, Mason Lanier, is spending the summer interning with us before heading off to Vassar College in the fall. 

LLG Summer Family Bash

Lanier Law Group has office locations all over North Carolina. We all work closely with each other and enjoy coming together a few times a year in one place. On June 29th, we had our LLG Family Fun Day at Palace Pointe in Roxboro, NC. We bowled, roller skated, played games, threw axes, and shot each other with paint balls all afternoon. It was a great time of food, fun and fellowship with our LLG family.

Brussels Sprouts & Cherry Limeade Margaritas

This month I am doing a short vegetable recipe and a cocktail recipe. So it's a Two-fer! 

Lisa's Smashed Brussels Sprouts


Ingredients:


  • Brussels Sprouts
  • Olive Oil
  • Parmesan Cheese
  • Salt
  • Pepper


Steps:


  • Boil or steam your brussels sprouts - not too well done.


  • Let them cool off a bit and then smash them with the bottom of a high ball glass or anything to give them a good mash. 


  • Toss them in olive oil, parmesan cheese, salt and pepper. 


  • Bake at 425 degrees on a sheet pan or baking dish for 15 to 20 minutes. 


Trust me - these are the best brussels sprouts! 

Cherry Limeade Margaritas

 

Ingredients:


  • 4 or 5 pitted cherries - muddled
  • 2 oz tequila
  • ½ oz Cointreau
  • ½ oz cherry syrup (the liquid from a jar of cherries) and you can substitute simple syrup if needed
  • Juice from one lime. 


Steps:


  • Pour the tequila, Cointreau and syrup into a cocktail mixer and give a good shake with some ice.


  • Lime and salt the rim of a cocktail glass


  • Pour contents into a glass and garnish with a thinly sliced lime wheel and cherry.
