February, 2024

I hope this message finds you well as we step into the month of February. Love is in the air, and for me it's not just about romantic relationships; it's about expressing appreciation and care for those around us.

Valentine’s Day is a time to celebrate love in all its forms. At Lanier Law Group, we are celebrating our love of our clients this month. We LOVE our clients! We have had a client referral gift program in place for some time. When you refer a client, all they need to do is give us your name as the referral source, and we send you a $25.00 gift card. As a token of our appreciation for your continued support, we’re offering an exclusive February bonus. We are doubling the gift to $50.00. Don’t miss the chance to claim your gift!

We are also celebrating our employees. We love our work family! This month I am kicking off a new recurring segment of the newsletter, the employee spotlight.

Sticky Asian Glazed Chicken

Sticky Asian glazed chicken is tender and juicy chicken coated in a sticky-sweet Asian sauce. This meal is ready in just thirty minutes, and the flavor is incredible! I like to use chicken thighs, but you can use breasts. If you use breasts, be sure to tenderize them first. If you pound out your chicken breasts, they come out so much better. I do it any time I use chicken breast.

Ingredients

• 1 Pound thinly sliced Chicken Breasts or boneless chicken thighs*

• 1 Tablespoon Olive Oil

• ¾ cup brown sugar

• ⅓ cup soy sauce

• 2 Tablespoons hoisin sauce

• 1 Tablespoon Sweet Chili Sauce

• 1 Tablespoons ginger peeled and grated

• Pinch of dried red pepper flakes to taste

• ½ teaspoon minced garlic

• Juice of one lime

Instructions

• Heat a large skillet over medium high heat and add 1 Tbs of olive oil. Add the chicken and salt and pepper. Cook chicken about 3 minutes on each side or until thermometer reads 165 degrees and brown on each side. Set chicken aside on plate.

• In the skillet whisk together brown sugar, soy sauce, hoisin sauce, sweet chili sauce, ginger, red pepper flakes, garlic and lime juice. Bring to a boil over medium heat for 1-2 minutes until sauce thickens. **

• Add chicken back to the sauce and coat each side with the sauce. Garnish with sesame seeds and chopped green onions.

I like to serve this over a fresh steaming hot pot of rice from my rice cooker. And steamed broccoli goes well on the side.
