We are rolling into January and ringing in 2024. If you celebrate New Year’s Eve a little too much, you may be dealing with a hangover on the 1st day of the new year. Alcohol is both a toxin and diuretic that causes dehydration, stomach irritation, and sleep disruption. This can lead to your typical hangover symptoms like fatigue, nausea, headaches, and dizziness. 


I have always sworn that eating a greasy cheeseburger was the cure. It turns out that is a myth. Dieticians recommend eating carbs like bagels, eggs, bananas, bone broth, and peanut butter with crackers. If the hangover is bad, some people turn to hair of the dog (drinking more alcohol) which may help temporarily. But this serves to perpetuate the cycle. 

January 15th is the day we celebrate Martin Luther King Jr. Day. Our offices will be closed as will federal and state offices. On this day, our beloved team member, Blanchee, will be having a planned delivery of her baby girl. We are all so excited to welcome little Athena Maria into the LLG family!


A couple of fun days in January to consider. January 6 is National Bean Day – they are good for your heart, but remember the more you eat... January 14 is National Dress Up Your Pet Day. Amy Williams, one of our senior adjusters, knows all about dressing up Maible (pictured below). January 29th is National Puzzle Day. In our family we love puzzles.

Southern Vegetable Beef Soup

This Southern classic soup is perfect for the coldest month of the year. Serve it with hearty chunks of sourdough miche bread and your crowd will love it! 


INGREDIENTS:


1 pound ground beef


1 onion chopped


2 cups beef broth


1 quart vegetable or tomato juice 


4 medium potatoes diced

(you can peel them if you prefer, but leaving the skin on is good too)


1 cup frozen corn 


1 cup frozen peas


2-3 carrots sliced


28 ounce canned tomatoes


1 cup frozen or canned green beans


1 bay leaf


1 teaspoon celery salt


1 teaspoon garlic powder


salt and pepper to taste (start with 2 teaspoons of each)


I use these optional veggies:


1 cup okra sliced

¾ cup baby lima beans


I also like to add a few dashes of Frank’s Red Hot sauce.


DIRECTIONS:


  • In a skillet cook ground beef with onion until browned and season with salt and pepper. 


  • Place cooked ground beef mixture and remaining ingredients in a large slow cooker and cook on high for 2 to 3 hours or low for 4 to 6 hours or until potatoes are fork-tender.


  • If you are short on time, this vegetable beef soup recipe can also be made in just 30 minutes by simmering the ingredients on medium-high heat on the stovetop.
