Grandma Anne's Latkes
4 medium Yukon Gold or 2 large Russet Potatoes unpeeled grated and soaked in water, then drained and squeezed dry in a towel)
1 small onion, grated
1/2 cup of matzo meal
3 large eggs
1 tsp salt , 1/8 tsp white pepper
¼ tsp. baking powder
Vegetable Oil for frying
Preheat the oven to 200°.Grate the potatoes into a large bowl. Cover with cold water until ready to use. Drain the potatoes in a colander, then put them between two dry towels and remove as much of the moisture as possible. Return potatoes to the bowl, grate in the onion and sprinkle the matzo meal over the top. Beat the eggs in a small bowl with the salt, pepper and baking powder. Add to the potatoes and combine everything well with a large spoon. Heat ¼ inch of oil in an electric frying pan or skillet to 400°.* Carefully place a rounded large spoonful into the pan, using the back of the spoon to pat it down flat. Repeat with about five more latkes. When they are nice and brown (5-7 minutes) turn them using a fork and your spoon. Continue to fry another 5-7 minutes until very brown. Carefully remove the latkes to a brown paper bag or paper towels placed on a cookie sheet. Place the cooked latkes in the oven to stay warm while you fry the next batch. Serve with applesauce or sour cream and sugar. Enjoy!
* never leave the room when oil is heating in the pan, it can start a grease fire!
