Pina Colada Shrimp &
Pineapple Chipotle Sauce
Ingredients
For the dipping sauce:
- 3 oz. Vita Sana Coconut Balsamic Vinegar
- 3 oz. Vita Sana Persian Lime Olive Oil
- 4 oz. mayonnaise (may substitute sour cream or Greek yogurt)
- 1/2 tbsp. sugar
- 1 tsp. Vita Sana Spice Lab Cyprus Citron Sea Salt
For the shrimp:
- 1.5 lb. or 13-15 shrimp (peeled and deveined, do not remove
the tails)
- 8 oz. rice flour
- 1/4 C. shredded coconut
- 1/2 C. Vita Sana Coconut Balsamic Vinegar
- 1/4 C. Vita Sana Pineapple Balsamic Vinegar
- 1/2 C. sparkling water (must be cold)
- 4 T. corn starch for dusting
- 1 tsp. Vita Sana Spice Lab Cyprus Citron Sea Salt and black
pepper, to taste
- Vita Sana Avocado Oil for frying
Directions
For the dipping sauce
:
Emulsify all ingredients together and chill.
For the shrimp
:
Put
VS Avocado Oil in a heavy bottom pan or fryer and heat to 375.
Mix together all ingredients except for corn starch and shrimp, and
whisk until smooth. Coat shrimp with corn starch and dip shrimp in
batter until completely coated.
Fry in oil for 3-5 minutes or until golden brown.
Serve Pina Colada Shrimp with dipping sauce, and enjoy!

Fagor Lux Multi-Cooker

This 6 quart multi-cooker combines the convenience of a pressure cooker & a rice cooker with the flavor infusing power of a slow cooker & yogurt maker for an amazing one-pot cooking experience.
Load your ingredients, close the lid & set your temperature.
It's that easy!

Slow-Cooker Chicken Tortilla Soup
Directions
1.) Turn on your LUX Multi-Cooker to a medium-high heat setting. Mix Herbs de Provence spice, garlic salt, and cumin together and place in multi-cooker. Drizzle 2 tablespoons Vita Sana Chipotle Olive Oil over spice mixture and add 2 more tbsp oil on chicken breasts, then add to multi-cooker with spice and oil mixture. Let simmer for 25 minutes.
2.) Add shredded corn tortillas, onion, green pepper, green chilies, diced jalapenos, diced tomatoes, and let simmer in multi cooker with lid on for another 25 minutes.
3.) Pour in your enchilada sauce, chicken broth, and water. Stir mixture. Place lid on multi-cooker with heat on medium-high and relax while your LUX does all the work! Once it's brought to a boil, leave chicken breasts and mixture in your multi cooker for 4 hours. If you want your chicken to be more tender you may cook your soup as long as your wish! If you prefer your soup to be ready within an hour, you may pre-cook your chicken and follow directions exactly the same.
4.) Once soup is to your personal perfection, ladle into bowls and top with sour cream, fresh cilantro, tortilla chips, shredded Vita Sana Chile Jack Cheese, and sliced avocados. (All optional)
