INGREDIENTS:
1 5lb.
pumpkin
1 cup brown sugar
1 tsp. nutmeg
2 fifth's of dark rum
1 can
of pumpkin pie mix
1 cup
heavy whipping cream
Cinnamon & sugar
Allspice
PREPARATION
Split pumpkin in half,
seeded. Rub with 1 cup of brown sugar and 1 tsp. nutmeg. Bake 2.5
hours at 300 degrees. Scrape out interior while
warm.
Put roasted pumpkin in an
infusion jar, and add 2 1/5's of dark rum. Let sit for 5
days.
Puree
pumpkin.
PUMPKINTINI
MIX
1 can
of pumpkin pie mix, 1 cup of heavy whipping cream, cinnamon,
nutmeg, and allspice to taste. Mix together.
ASSEMBLY
Add 4oz
of Pumpkintini mix with 1.5oz of pumpkin-infused dark rum over ice.
Shake, and serve in martini glass with a cinnamon & sugar
coated rim.
