1 teaspoon kosher salt
1 teaspoon lemon zest
2 tablespoons + 2 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard, optional
1 large egg
1 egg yolk
1/2 cup olive oil
1/2 cup light-tasting olive oil or vegetable oil
parsley, to garnish, optional
