Primordia Mushrooms
Mushroom Musings with Jesse
Happy Thanksgiving everyone! Mushrooms are one of those essential Thanksgiving foods- quintessentially fall cuisine. At most feasts they at least make a cameo in the gravy, but in our family they are also part of soups, stuffing, and mushroom pie! Markets are likely to be thronged with pre-holiday shoppers this weekend, but have no fear! We will have a ton of mushrooms (I'll have to do the calculations, but it is possible that we are sending a literal ton- aka 2000 lbs. of mushrooms out into the world between all of our markets!).

Here is my favorite mushroom gravy recipe:

1.5 lbs mushrooms (I prefer shiitake, maitake, and pioppino owing to their strong flavors)
4 tbs butter (sub any oil of your preference here)
4 tbs flour (I use bob's redmill GF mix)
all the drippings from the turkey
1/2 cup white wine (optional)
2 tsp rosemary, ground fine
2 cloves garlic
salt and pepper to taste
extra chicken broth as needed

In a large skillet, melt the butter on medium heat. Chop the mushrooms and add to the skillet. Saute until mushrooms are beginning to brown. Add the wine if you choose to use it and let it simmer for 5 min or so. Next add rosemary powder and minced garlic. Add flour to the mixture and stir till the mushrooms are uniformly coated in the flour. Add all the drippings from the turkey and extra broth if needed and stir well. Bring to a boil and allow to simmer for a few minutes as the mixture thickens. Remove from heat and ladle into your favorite gravy ware.

Thanks!
Jesse
