We are excited to introduce a new cheese producer, Old Forge Dairy! Old Forge is located in Kent Ohio and produces farmstead cheeses from the milk of their small herd of Ayrshire cows. Farmstead cheese is made with milk produced on the farm. The Oravets family is involved with every aspect of the cheese making process from pasture to cow to finished wheel.
"We make a variety of natural rind, whole, raw milk cheeses all from the milk of our small herd of Ayrshire cows. Our cheese is made differently, with a superior texture, and complex, pleasant flavor. We aim for it to have the same tangible, and almost inexplicable quality that is present in home-grown produce and farm-fresh eggs. The steps we take to achieve these goals begins with the way that we farm and care for our animals. The breed of cow, Ayrshire, is important to us, as they are a hearty, heritage breed, who make very high quality milk for cheese making. Because the breed does not produce very large quantities, they are unpopular for commercial producers. However, they fit us perfectly.
All of our cheeses are aged on beech wood boards, cut from our own woods, and have an earthy, edible natural rind, whether it be cloth bound or brine washed."

Old Forge Dairy Clothbound Cheddar
is a raw milk, English-style Cheddar. Bound in natural cheesecloth & aged for 12 months, it has a smooth,creamy texture, & complex flavors, often with fruity notes.
Old Forge Dairy Gouda
is a washed curd cheese. Aged for 8 months, it is creamy & bright.
Old Forge Dairy Alpine
is firm textured with buttery, nutty, big, rich flavors. Aged for over a year.
Old Forge Dairy Italiano
is a hard cheese, suitable for slicing or grating. Aged for 12 months, it has the perfect balance of savory & sweetness.
