Malabar Spinach

At a recent Brockton Farmers' Market we noticed Malabar Spinach for sale from Mai Lee's Asian Vegetables. Assuming it was a variety of the 'regular' spinach we are very familiar with, we purchased some. After some quick research we realized it's actually quite different.
