Hello dear friends and clients,

Valentine's Day just passed but I'm still feeling the love! Your kind words and deeds will stay with me a long time....thank you! A mild and warm winter has delighted us so far. You may have heard that if you are away and experienced the lack of snow in the valley if you live here. That has had a positive effect on the market keeping it rather active, especially for January! Assuming the economy stays its course, I am looking forward to a brisk 2020 season. The multi-year low in inventory will no doubt keep prices on the rise.

Denise's Cooking Corner - Pork Chops in Lemon-Caper Sauce
Pork is high in zinc, too!
INGREDIENTS
4 bone-in pork chops (about 8 ounces each)
 Kosher salt and freshly cracked black pepper, to taste
½ teaspoon dried thyme leaves
2 tablespoons olive oil
4 tablespoons unsalted butter
1 very small shallot, minced (about 1 tablespoon)
2 garlic cloves, minced (about 1 teaspoon)
2 teaspoons all-purpose flour
1 cup dry white wine
1 ½ cups chicken stock, homemade or low-sodium, if store-bought
2 tablespoons drained capers
2 tablespoons minced fresh parsley, plus more for garnish
1 teaspoon freshly grated lemon zest, plus 2 tablespoons juice
 Hot sauce (optional)

PREPARATION
Dry the chops with paper towels, and season aggressively with salt, pepper and the thyme. Swirl the olive oil into a large skillet, and heat over medium until the oil begins to simmer. Add chops, and cook until well browned on each side and cooked through, about 5 minutes per side. Transfer chops to a plate, and cover to keep warm. Drain the fat from the skillet, then melt 2 tablespoons of butter in it over medium heat until sizzling. Add the shallot and garlic, and sauté until the aromatics soften, reducing the heat if necessary, about 1 minute. Sprinkle in the flour, and cook, stirring, for 2 minutes. Whisk in the wine and chicken stock, raise heat to high and bring the liquid to a boil, scraping up the browned bits on the bottom of the pan. Reduce heat to medium-high and cook, uncovered, until the liquid is reduced by half, 7 to 10 minutes. Stir in the capers, parsley, lemon zest and juice and hot sauce to taste (if you’re using it), and simmer for 1 to 2 minutes. Stir in the remaining 2 tablespoons of butter until it’s melted and the sauce looks smooth. Nestle the pork chops into the sauce, and allow them to warm up for a couple of minutes, then serve, pouring sauce over each pork chop to taste. Garnish with more fresh parsley.
Denise's Book Corner.. B eneath a Scarlet Sky by Mark Sullivan
At 91, Pino Lella still lives just north of Milan, Italy. He is the subject of Mark Sullivan’s historical novel that has risen to such popularity it is now being made into a movie. The story revolves around a 17 year old who risks his life to smuggle Jews out of Mussolini’s Italy during WWII.

Pino is a normal Italian teenager obsessed with music, food, and girls, specifically Anna. He wants nothing to do with the war or the Nazis. However, his innocence is cut short when the family home in Milan is destroyed by Allied bombs. Courageously, Pino joins an underground railroad helping Jews escape over the Italian Alps.

In an attempt to protect him and keep him out of combat, Pino’s parents force him to enlist as a German soldier. A year later, Pino is injured and is recruited to be the personal driver for Adolf Hitler’s Italian General Hans Leyers. Consumed by youthful bravery and love for Anna, he seizes this unusual opportunity to become a spy in hopes of hastening the end of the war.

The success of this book has been notable. The comments left by readers humbled the real life Pino. He says he is “a little embarrassed” to hear the praise from strangers. But at the same time, "he’d like to hug every single one.”

This story made me think of the acts of courage we see in our country and around the world. Brave women and men who pledge their lives and sacred honor to do the right thing against autocracy and tyranny.
