Easy Ways to Eat Your Vegetables!

Raw Beet and Pear/Apple Slaw

Fresh and bright salad for summer!

1 teaspoon fresh ginger, grated

1 pound beets, peeled

1 large pear, washed (or apple)

1 small cucumber, peeled

2 tablespoons cider vinegar

1/4 teaspoon salt

1/4 teaspoon pepper

2 teaspoons oil

In a medium sized bowl, grate fresh ginger using the smallest holes of a cheese grater.

Grate beets (3 cups grated), pears and cucumbers into the bowl with the ginger. Mix well until ginger is evenly distributed.

In a separate bowl, whisk the vinegar, salt, pepper, and oil using a fork.

Add dressing to salad and mix well.

Zucchini Meatballs

A great vegetarian option with all the flavor

3 medium zucchini

2 cloves garlic minced

1/4 cup sliced basil

1 large egg lightly beaten

1 cup breadcrumbs

1/3 cup Grated Parmesan

black pepper

Preheat oven to 400 degrees.

Mince or grate the zucchini into a colander (see note), and add a few pinches of salt. Toss with your hands to combine and let it rest in the sink to drain for about 10 minutes. This will remove some liquid and will help them stick together later in the recipe.

Put the dried zucchini in a clean bowl. Add the garlic, basil, egg, bread crumbs, and Parmesan. Add some black pepper.

Form the zucchini mixture into small balls. You should end up with about 12.

Move into an oven safe dish. Bake for about 25 minutes until meatballs are soft and cooked through, if using a thermometer they will be ready at 165 degrees F. Serve over pasta with spaghetti sauce.
