July is National Parks & Recreation Month!
|
| This July we're celebrating 30 years of Park and Recreation Month and the enduring importance of parks and recreation for the world. Parks are the cornerstone of nearly every community, serving millions of people as the places anyone can go to be active, live healthier, connect with nature and gather together. Parks and recreation make our lives and communities better. This mission lives on and will continue to intensify into the future. The National Recreation and Parks Association (NRPA) has released a "Power of Parks" video that illustrates the important reasons why parks and recreation are vital to our communities. NRPA and The City of Elgin Parks & Recreation Department encourages all people that support parks and recreation to watch and share this video with the hashtag #JulyPRM30. Feel free to follow us on all of our social media pages and share all the great ways that you and your family support and participate in parks and recreation programs -don't forget to use #JulyPRM30. Look out for our #pictureuinparks campaign throughout July where we showcase our community partners and people who support parks and recreation all month long on our social media sites. Share, like, and comment on them all! Greg & Lou - The Grumpy Goat and Elgin Public House Thanks for all of the support from you - our community! We couldn't do it without all of your!! Enjoy Parks & Recreation all July and ALL YEAR LONG! |

Healthy Pick of the Month

| Chicken & Summer Veggie Tostadas
A south-of-the-border supper is ready in a snap thanks to quick-cooking chicken tenders. The tostadas can easily become soft tacos if you skip broiling the tortillas. Serve with black beans.
Ingredients
2 teaspoons
canola oil
1/4 teaspoon
black pepper
12 ounces
chicken breast tenders
1 cup
chopped red onion (about 1)
1 cup
fresh corn kernels (about 2 ears)
3 tablespoons
chopped fresh cilantro, divided
4
(8-inch) fat-free flour tortillas
3 ounces
Monterey Jack cheese, shredded (about 3/4 cup)
Directions
Preheat broiler.
Combine first 3 ingredients, stirring well. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle the spice mixture evenly over chicken. Add chicken to pan; saut? for 3 minutes. Add onion, corn, and zucchini to pan; saut? for 2 minutes or until chicken is done. Stir in salsa and 2 tablespoons cilantro. Cook 2 minutes or until liquid almost evaporates, stirring frequently.
Working with 2 tortillas at a time, arrange tortillas in a single layer on a baking sheet; lightly coat tortillas with cooking spray. Broil 3 minutes or until lightly browned. Spoon about 3/4 cup chicken mixture in the center of each tortilla; sprinkle each serving with 1/4 cup cheese. Broil an additional 2 minutes or until cheese melts. Repeat procedure with remaining tortillas, chicken mixture, and cheese. Sprinkle each serving with about 3/4 teaspoon of remaining cilantro. Serve immediately.
