Recipe: Roasted Pork Tenderloin


Ingredients

3 cloves Garlic, finely chopped

3 tbsp extra-virgin Olive Oil

3 tbsp. Wisconsin Maple Syrup

1 tbsp. Whole Grain Mustard

2 tsp. chopped fresh Rosemary, plus more for serving

1/4 tsp. crushed Red Pepper flakes

Kosher Salt

2 Pork Tenderloins

Ground Black Pepper


Directions

  • In a medium bowl, whisk garlic, oil, syrup, mustard, rosemary, red pepper, and a large pinch of salt to make the sauce.
  • Place pork tenderloins in a small baking dish. Season all over with salt and pepper. Pour marinade over and let it sit at room temperature for at least 30 minutes.
  • Preheat oven to 400 F. Roast the pork, basting with sauce halfway through. Continue roasting until a thermometer in the thickest part reads 145 F (about 30 minutes). Remove from oven and rest for 10 minutes.
  • Transfer pork to a cutting board and cut into 1-inch pieces. Arrange on a platter. Spoon sauce over the slices and top with rosemary.

We are accepting whole deer for processing at Louie's Wild Game Processing location.

We plan to continue accepting whole deer through the December antlerless season, although we may always need to limit the number of deer we can accept. Any changes will be posted on our website and Facebook page.

December's spice is cardamom with a pork recipe and an easy cookie recipe. Kits are available starting the first of the month.
